Japanese Mom making Coconut Tapioca in my Kitchen

  • My mom is going to attempt to make her favorite coconut tapioca. She always purchased it at the store and it was getting a little pricey.So here goes.
    Water 3 cups
    sugar 2/3 cups
    salt 1 tsp
    1 cup tapioca pearls
    2 cans coconut milk (13.5)
    optional: Mango / Banana

    Thats our fave dessert here in Philippines. Coz we r sorrounded by coconut trees n we have plenty of mango.

    I grew up making tapioca and couldn’t remember the measurements. I finally just made it again using your mom’s recipe! I found the cooking process went faster by soaking the tapioca for a while first. Thank you!

    Omg! My tummy is rumbling watching! The recipe looks perfect! I have a Thai friend that works in my building that used huge tapioca pearls and it’s very very firm. She pours it in a loaf pan and slices it after it’s chilled. It’s very good but honestly your mom’s recipes looks creamy & yummy I plan on trying that this week after heading over to the Asian grocery store today. Your mom is amazing & adorable! Each moment with our parents, grandparents & great grandparents are treasures. I’m lucky I have all three I keep a journal of things they tell me about their past or just about anything to me each sentence are pearls of treasures & wisdom. Thank you for sharing💖

    I have never tasted tapioca before although I have heard of it on the internet. Your mother must be so happy with the success of making it herself and having it come out right.

    Thank you again Mom for another wonderful recipe! 👍👍 I would also love to try this with purple sweet potato, grated spoon coconut, chopped pineapple, cacao powder, and concentrated coffee just to name a few. Individually flavored of coarse. Looks like it’s a great workout for the arms too!

    I love a similar Chinese version that's more watery, but I'm dying to try this one. Definitely going to make it, maybe with some watermelon? Applause to your mom for tackling new things!

      Good luck... you can tweak it just the way you like too. Someone suggests to add a drop of Vanilla extract....

    Thanks for sharing your recipe. I substituted with 1/3 cup stevia and chia seeds instead of tapioca. The coconut flavor was well balanced.

    I looove tapioca and haven't had it years ... I think the 'blue can' coconut milk seemed thicker~ richer? Thank you to your mom in showing us to be brave in trying new things 💖 You were both wearing colors that looked good. :))

    Tapioca desserts are delicious, I like the Cambodian one which you can put bananas, Jack fruit, even sweet potatoes (kumara) but cook it with the tapioca. I like sticky rice with sweet coconut cream sauce on top with fresh mangoes or durian is nice also. 😁

    Looked good similar to south east Asian recipes from Thailand or Cambodia or other south east Asian countries have tapioca desserts. 🙂

    Thanks for sharing! Just a side note ... I prefer coconut milk from Thailand (like the 2nd can you showed). It's a lot creamier than the Hawaiian Sun brand. Use it for haupia as well.

    In the Philippines they do this but they also add different fruits like jackfruit, papaya, cassava. They also make these ball doughs made out of sticky sweet rice powder and add water to it to make a dough and ball them up into the size of a small cherry, well maybe smaller but bigger then a marble, and cook it in with the coconut tapioca. This dish is what the Filipino's call Ginataan. It is one of my favorite desserts in the Philippines. You probably can find recipes here on RUclips for it.

    This was so interesting, sister Nickey! I like that your mom wants to branch out and try new recipes! The coconut tapioca looked so beautiful! When I was younger I couldn't bear eating certain textures like tapioca -now that I'm older I enjoy it. Thank you both for showing us the recipe. And don't get me started over pineapple from Hawai'i. Once you eat those it is hard to eat ones on the mainland. Yum!
