    Ingredients
    1 vanilla bean
    1 Tbsp vanilla bean paste
    2 cup 2% milk
    ¼ tsp ground cardamom
    6 Tbsp sugar
    3 Tbsp quick-cook (minute) tapioca
    1 room temperature egg, separated
    ½ cup fresh raspberries
    Directions
    1. Scrape out seeds of vanilla bean and whisk into milk (or stir in paste) into a medium saucepot. Add cardamom, sugar and tapioca and let sit 5 minutes. Bring mixture up to a boil over medium heat, stirring constantly (this should take about 12 minutes).
    2. Once simmering, keep cooking 3 minutes more, stirring constantly (in this 3 minutes, the tapioca will double in size).
    3. Remove from heat (pudding will have only thickened a little. Whisk ¼ cup of mixture into egg yolk and add yolk to pot, stirring to blend. Whip egg white until a soft peak then stir quickly but gently into to pudding.
    4. Arrange a few raspberries into bottom of each dish and ladle warm pudding over each. Cover dishes loosely with plastic wrap and chill until set, about 3 hours.

      I am from India and here we make many types of pudding tapioca as well. But adding an egg is something I have never seen and haven't expected even. But I will gonna to try it soon.

    Hi Anna thank u soooo much for all the lovely n easy recipes.
    This tapioca sounds sooo refreshing. On my island Mauritius, we mauritians we cook that as dessert also as a remedy for people havg high pb. Our grandparents say it helps reduce high bp.

    Believe it or not, the first time I ever had tapioca as a pudding was when I was in the hospital a few years ago. Before that, I always bought it to use as a thickener for cherry pie filling. That tapioca putting was my favourite thing in the hospital that time. This recipe looks beautiful. I would even make this for company!❤️👍😀

    Tapioca pudding is my absolute favorite pudding! It always brings back childhood memories. My grandmother used to make Tapioca pudding and serve to my brother and I as a very special treat. It is rare I find a chef promoting Tapioca. Thank you so much for this! DELICIOUS!!!

    I love your videos and recipes and have made quite a few with great success. This one, though, didn't work for me. Three minutes resulted in still a number of small unplumped tapiocas and not much thickening. I cooked longer and it thickened somewhat. It is chilling in fridge now. If it doesn't firm up, I will pluck out raspberries and see if I can thicken with more tapioca and cooking again. Will probably soak the tapioca in a bit of milk first and maybe for longer than five minutes.

    This is a great pudding. I soaked my pearls longer because my pearls were whole, hers looked a little smaller or smashed or something. Anyway. 3 min. simmer was ideal. Tapioca pudding (with fruit is great idea) and rice pudding are my favs!

      Yes. I have heard that about 2 hours soaking the small pearls (balls) is good -- and that the large bubble tea size tapioca pearls need longer (maybe up to 6 hours soaking).

    If you wash topiaca 4 or 5 times then when you cook it won't be sticky all pearls will be separate 😁👍👍👍

      Shameem Akhter I make tapioca using small tapioca pearls they need to be soaked for 30 min. What she used looks more like a faster tapioca, like a more instant type, it seemed ground up to me in the video. You couldn’t see any pearls.

      It is a pudding it is supposed to be sticky
      If you make a drink then you don't want stickiness

      @@smileytow1925 i used the same tapioca as in the video, i am cooking mine as the same mode like in the video ( vegan tapioca FIOR DI LOTO tapioca in pearl 15mn cooking without soaking before) that's why she dit let the pearls soaking during 5mn to let them more tender to cook more fasting)

    Great recipe. I add a small can of drained, crushed pineapple while still hot, and mix in. Can't beat it for taste.

    Anna, I had to double the amount of tapioca pearls, because my pudding didn't have the right consistency. It was simply too runny. I didn't know what to do, so I just added 'new' tapioca at the end of cooking the pudding and simmered it a couple more minutes. It came out amazingly silky, light and fluffy! I ended up eating half of the pudding right from a cooking pan , still warm! I'm just wondering why I had to use double amount of tapioca... Nevertheless, I'm going to make it again for sure! Thank you Anna!

      The pudding firms up considerably once it is cooled and chilled (but that takes some time).

      Hi! Try to use almond, rice or soy milk - choose which one suits your taste the best. It'll come out great!

      It is common to use coconut milk instead of cow's milk for tapioca pudding recipes, especially among vegans. But if you don't like the coconut taste to be too strong, I would recommend using maybe some other milk, such as almond milk. The coconut milk is very nice due to the high fat content. Some people used canned coconut milk; I prefer to make it myself by blending coconut flakes with water and straining. I don't have a recipe for that, but I use maybe a cup of coconut flakes purchased at a health food store without any additives -- natural flakes, NOT the kind frequently sold at supermarkets -- to about 1 1/2 cups water. For this recipe, maybe 2 cups coconut flakes blended well with 3 cups water. Blend, blend, blend, then put through a fine sieve (or better yet, a nut milk bag, which would be easier and quicker). For a higher fat, creamier coconut milk just add more coconut to the recipe above.

    I can't remember but I once heard that before the pearl starch the used either fish eggs or fish eyes to make tapioca about 200 years ago or more. is this true???

    That is *minute tapioca*. Pearl tapioca is larger, and resembles fish eyes when it's cooked.

      I'll bet you could. I would just make sure and whisk it well when first adding to the milk so that there are no clumps.

      That's just the variety. Most of us are accustomed to seeing bright red raspberries, but they come in various colors. I've eaten golden raspberries before.

      Tapioca can be replaced with sago, if you can find that where you are. That's what I'm going to try doing :)

    Thank you for showing yourself washing your hands. They NEVER do that on Food Network, and it drives me crazy. They'll even handle raw chicken, then wipe their hands on a dish towel.
