You guys crack us up every time! lol! I haven't seen pandan leaf at our local Asian store. I'll have a closer look in the freezer section next time. We have a similar preparation with tapioca pearl too, but we add in cassava root instead of banana. It's like tapioca with tapioca. lol! :D We'll try your banana version, we just know we are going to love this.

Mum loves those asian bananas - I don't like them so much... standard bananas are so much sweeter I think and better texture. Rawch and Dee, I was wondering if you could do a recipe video of the Vietnamese cold dessert drink. It is also called che at the local drink shop here. It is like a shaved ice with coconut milk and then red bean, pandan jelly, or other types of jelly or tapioca pearls, taro paste and/fresh fruit like long an or jackfruit. The ones we buy are always way too sweet!

It's really delicious. I cut the bananas smaller though. Now I need to wait an hour. But it already tastes warm so good😋. I used the rice cooker 😂 I added oat milk though

Don't know if anyone mentioned it before but in the Caribbean/Latino/Jamaican/Guyanese grocery stores you may find them cheaper ...since they are a tropical fruit you may be able to find them in one of them. we call them in Puerto Rico " "guineo manzano or guineo manzana" (which means the same darn thing, lol) and in Dominican Republic it is called "platano manzano". funny thing, what we call "guineo" what they call "platano" and what we call "platano" they call it "guineo" :/ :D all good. in america they are called "lady finger" (really i don't know what's so lady about it, lol) small banana, or "silk banana". Guyanese call it "fig banana" and in Jamaica "short finger". Hope this helps you find it whenever it is out of season for you. I find it awesome that we share so many same things and we have given them different names :D stay weird! :D
Lol, yes Rawch is a-okay! We've never made it with large pearls before, are you talking about the super big ones like for bubble tea? If the tapiocas are of the larger variety, they may need to be cooked first before adding the bananas or the bananas will cook too long and become mushy. If you try, let us know how it goes!
I've made this tapioca pudding, but I cook the tapioca separetely, and dump the water, then added to the water and the coconut milk. you can guess the rest.

The package of tapioca pearls that we have does have an expiry date. Not sure when the date of production was but it expires in about a year. But if you stored in in an airtight manner it should be okay. Unless it's absorbed some weird smells, lol
If you cannot find pandan leaf, you can use pandan extract. It can be found in Asian markets. The reason you use saba or apple bananas is because they are cooking bananas. Regular bananas will explode if you try to fry it and it will be mushier if you use dessert banana.
Yeah, we think that would work just fine. Just make the recipe as written without the tapioca pearls and once it's removed from the heat and cooled slightly, you can add chia seeds and let it sit for an hour. The consistency should be similar to pudding.
Probably wouldn't recommend tapioca flour because it might turn into a big clump of gooeyness. You can omit the tapioca pearls from the recipe and once removed from the heat and add chia seeds instead. I just thought of this actually upon reading your question, lol. We're going to give it a try the next time we make this dessert, thanks for sparking the idea! 😛

We have this dessert in Thailand, too, and it's also one of my favorites! :D Instead of bananas we use young coconut meat, corn, taro or jackfruit :)

Can you use coconut milk in a carton ?
Yes, that will be fine. If it's coconut cream, you may want to use less just in case it's too decadent and rich.
