    Thank you for this. I was raised on raw milk and home made butter, cheeses. Mom froze the butter. I had never heard of canning it, and I doubt she had I do not have access to either just now, but will try to find a source of farm fresh butter when we settle.

    I have canned butter before, but never pressure canned it. I was told to sterilize jars then put in oven as water could not get in the butter. I keep them in the refrig. I will try your way so I can have shelf stable as well. Thank you!

      My word, I only learned to can just under 15 years ago. My mom was sure that it would explode and take out a small city. Nope, only have gotten sick on grocery store food, never on home canned.

    Oh my goodness THANK YOU! I have watched several videos on canning butter but EVERY single one ommitted the step about jars being hot and IF you warm them using the normal canning method of boiling the jars. I was not sure if the water from the canner effected the butter aka ghee. I have had frozen butter, for what seems forever, and the only thing stopping me has been this one step!! Thank you SO MUCH!!

    I canned butter in 250 ml WM jars with 15 lbs (I live at 642M) for about 35 min and unfortunately I ended up with browned butter. I will certainly use it, but it will limit what I can use it for. I know Ball says 75 min because it is a protein, however that makes no sense. It will take a lot longer for heat to penetrate a chunk of meat to the center of the meat and center of the jar than it will liquid butter. So anyone living above 1000 ft and needing to use 15lbs, be aware if you go for 75 min you will likely end up with browned butter.

      @@TheMacsLife0 Ya, it sucks because it obviously makes a difference. I have an old Presto pressure canner/cooker and it states
      "In regions of 600 m to 2400 m altitude, increase recipe processing pressure by 5 lbs. So when 10 lbs of pressure is recommended, I need to increase pressure to 15 lbs. Because you were canning in pints at 10lbs for 75 min, I was using 250ml jars and used 15 lbs and half of the processing time of 75 min. So I went about 35 min which I felt was likely going to be overkill for a liquid. Turns out I was right. I just want other to know before they go and purchase a ton of butter to can in regions over that 600 m. They can make the decision whether brown butter is ok, or if it is not:) It obviously makes a difference, because I can't see you canning butter and ending up with browned butter and not telling people. Lol So the extra 5 lbs, although only a difference of 10 degrees makes a difference for butter.

      I have the Presto also, but I changed the weight to a jiggler weight & it is so much easier...I was constantly stressing over every degree on my gauge & the juggler is way easier

      Two sticks of butter equal a cup
      Two cups make a pint so four sticks of butter should fill a pint

      Well -- one cup is two sticks and two cups are in a pint so four sticks per pint (I'm not great in math but basic math -- u should have 32 sticks of butter for 8 pints)

    I throughly enjoyed this video. You are a very good instructor and easy to follow.
    Question: can I use organic grass fed butter from the store and still can a quality butter. It’s won’t be farm churned I know but it’s the best I can get in the city.
    Also at what point or which layer is the ghee? The first layer that you take off before canning or does it get added back into the butter when you give it a turn to blend?

      I honestly don't know much about the true definition of ghee- I consider mine butter - yes I think you'll be very happy with organic butter :)

      Mine gets eaten within a year so at least a year - I'm sure longer if they are properly sealed

    Misty I’ve watched slot of videos for canning butter and the pressure canning methods snd time are so different for example :the person had everything hot ,sterilized ,filled jars ,added to canner brought up to pressure then turned it off waited for it to
    depressurize, then opened, put them out on the counter when cool enough, shook them off and on for several hours until they set . My point is they don’t
    pressure can it for any length at all ,just got it to pressure then off . Other times the Canning times vary . Also people need to understand. There is not an approved method to can butter by the national center of home food preservation. There is no recipe there is no procedure for butter in these preservation books.

      I have no idea - I have never counted - I just wait for it then stop once I have read the solid stage

    Great video, thank you! Can you use salt in the butter or does it turn grainy? The only organic butter I can find has salt in it. I would also love to see a video of you making butter. Thank you again and God Bless all of us...

    I am new to canning. I canned beef stew and jars sealed but couple of jars lost some liquid? Are they good and what went wrong?

      They are good
      Some items absorb more water than others
      It's still fine!

    Thanks Misty for sharing this canning butter. How long can you keep that butter like that without it going bad. A friend of mine saw that they have electric pressure cookers would that be better than a stove or do you think not.

      I do not know anything about electric canners! Supposedly 1-2 years but I know people who have had it on the shelf for longer than 2 years!

    Trust the way you can! You are such a good instructor, clear and precise! I do have a question about altitude...where is a good site to find your altitude? Google earth says I'm at 980ft and my app on my phone says 1148ft. Do do I do 10lbs or 15lbs of pressure? What is a trusted place to find altitude? I'm confused!
