    My 98 year old mother in law has dementia. I try to call her every day and tell her what I am doing. I told her I cleared my garden and we had "stabbed" potatoes for supper. She knew what i meant! She said you weren't very careful with the pitch fork when you were digging! I loved that she was right.

    Oh my dear I LOVE you and watching everything you and your family do! I am 78 years old, and I wanted a farm girl life since I was a teenager! I was married to a dear man for 54 years who needed to be closer to his work than my farm would allow. Finally sold the farm and gave up on my dream. Always had wee garden spots and also large pots. I have had a wonderful life and 2 beautiful children, I am alone now, I believe God gave me what He knew I could manage❣️ To you and your family…..♥️

    Love this idea!!! You can also make a light roux with some butter and flour (I make them in batches and freeze in an ice cube tray) and then when you want to eat, add a cube or two to a pot, let it melt, dump the chicken and gravy on top and it will thicken nicely. That way, you don't have the raw flour taste.

    • @Hurricaneforc3winds

      Do you mean, can it that way? With the roux on the bottom?

    • @Mariaabroad
      @Mariaabroad Год назад +16

      @@Hurricaneforc3winds no, I make a roux with butter and flour and either milk or broth. Then I freeze it in ice cube trays and anytime I need to thicken something, I just throw a cube or two in to make a gravy.

    I used my quart jar to make chicken curry! I put a quart into a pan and started it heating up as I added:

    1 can coconut milk
    1 tsp cinnamon
    2 tsp sugar
    2/3 cup egg noodles.

    My husband and I just started canning and your canning raw chicken video was the first thing we tried! It came out perfect as we tried one jar a few months later.
    Second, we canned the beef stew as our second project and we are awaiting the testing.
    I can’t wait to try this out! We are truck drivers over the road so I cannot wait to try this on our hometime. I plan on making homemade chicken stock and want to test one jar before doing it in bulk. I couldn’t stomach risking losing all of the work ha.

    The wine isn’t for acid, it’s for flavor. You could can that in straight water if you wanted to. It’s the pressure canner doing the preserving. Just look at recipes for canning chicken or any of those vegetables- same time, same pressure, no acid.

    Hi Carolyn, I left you this comment on another video comments, it was too old video so will redo it here. First I love your videos and love what you and your family are doing. Keep up the good work, I am sure these videos are helping a lot that watch. I am a 75 year old woman and live in Western Arkansas. I have had some kind of garden since I was 3, and I have seriously been raising 90% of my family eat since I was 28. I bought my first freeze dryer in August. I have two points I feel is important about the freeze dryer and the freeze dried food. I love my freeze dryer, and I am thinking about getting a second one. Here is an important bit of information about these freeze dryers: I had a mess to clean up the first time I was freeze drying my pureed pumpkin: I had never knew and hadn't realized you should fill the trays two thirds full of semi-liquids or liquids because the pressure would cause the food to bubble over and make a mess to clean up. Here is my info that people need to know: Well I had one of these messes. While I was cleaning the tray box, I thought my little hands could slide inside those tray slots well like a big dummy I slid my hand in it. That was very bad Idea my hand slid inside and just like a razor sharp knife that edge of the tray holder slice a chunk of meat at the first knuckle: So people whatever you do do not attempt to stick your hand into those tray slots. We own an old farmhouse that is about 100 years old. Both of my pantries floors very unstable and I and feel as if they could give way to all of the weight. So I am going to take the canned goods out of the area that feels like the floors may collapse, and I am going to store the freeze dried foods there. The weight of the freeze dried is so much lighter weight than the canned food is. I am sold on these freeze dryers. It will be awhile before I can buy my next freeze dryer but I will buy a second one. Jessie from Arkansas

    I use modified cornstarch, the cook type to can gravy with meat. I can turkey & gravy in pint jars for my husband lunch. Others get so jealous of his lunches. Homemade fresh bread, turkey & gravy 😋

    I love your channel... JUST THOUGHT YOU SHOULD KNOW... that you are using the mason jar opener incorrectly... turn it the other way. The original 1950s Pry A Jar packaging has a picture of a jar on the carboard panel that holds the jar opener in place and the opener is facing up to the jar as if it were going to open it. Clever, anyway... it is so much easier... give it a try and you won't be fumbling with the opener anymore.
