A few things stuck out to me in this video. For some reason, I really liked those wooden blocks that they used to raise up the pans of roast pork to allow them to cool off. And, then, to raise the plates of raw baos in the bamboo steamers. Something aesthetically pleasing about them...and, then, the sheer practicality of them. Also, how the cha siu sauce was in gelatin form rather than a liquid. I've only seen cha siu bao making videos where the sauce was...well, a sauce. What I saw here was more akin to making soup dumplings. Plus, the chefs were very meticulous with the cutting of the rice crepes. They cut them into the perfect shape and length. No frayed edges or clumsy or clumpy shapes.
