Chocolate Chip Cookie Dough Buttercream Recipe

  • Hey guys!
    In this video I share my DE-licious recipe for Chocolate Chip Cookie Dough flavored buttercream icing, which I use as a cake filling (or a snack LOL)

    RECIPE:
    8oz. Cream Cheese
    8oz. Salted Butter
    1C Brown Sugar
    2-3t Vanilla
    1/4 - 1/2C Milk
    2lbs Powdered Sugar
    1/2 - 3/4C Chocolate Chips
    Just a note:
    Any icing made with cream cheese, alone or on cake or cupcakes, can sit at a cool room temperature for up to 8 hours before it should be refrigerated. The frosting can be made and transferred to an airtight container and stored in the fridge for up to 3 days, or in the freezer for up to 1 month.

    Hi Karolyn! Another GREAT video! What's the combination mix for the chocolate chips?

      Thank you Jackie! It's Nestle semi sweet chocolate chips, put in the food processor to break them up. And then I add a little flour to help prevent them from sinking in the cake batter. Watch this video starting at 2:45, it shows what I do. ruclips.net/video/tJ4sJjal7CM/видео.html

    Anyway, could you use the cream cheese flavoring instead of cream cheese in this?

      Yes you can! Make sure you get the icing flavoring I show in this video, not the emulsion!

    Hi karolyn I enjoy watching your videos ,keep up the good work.iam in south Africa I'm used to the kg ,what exactly 2 pound when we convert it to the cups or kg?

      Thank you! I hate that America is one of the only places that uses this dumb measuring system! LOL
      2 pounds is approx. 0.907KG, so almost 1 KG.

      The butterscotch chip filling was delicious. My granddaughter loves butterscotch. I also use the leftover chips to add a butterscotch drip. It was a hit. Thanks so much for sharing wisdom ❤️

      Most people get it with vanilla (yellow), chocolate or marble. And I’ve also done it with chocolate chip cake too!

      Most people get it with vanilla, chocolate or marble. I’ve had a few order it with chocolate chip cake.

      @@KarolynsKakes I have an order for cookie dough cupcakes. Do you think this frosting without the chocolate chips would be ok? (It reminds me of a brown sugar buttercream without the chips).

    Did you have to cook the flour you added to the chocolate chips? And what’s the ratio? Ty

      I actually stopped adding the flour to the chocolate chips as I found that they don't sink to the bottom of the pan when I bake them in cakes! I break them up in a food processor so they aren't huge and there is a size variation.

    Do you think it would come out the same if I used a Philadelphia brand original cream cheese in the spread instead of the block?

      Another question, I actually made this and mine turned out really light. Like ivory colored almost. Is that how yours is?

      I never used the spread, I'm not sure if it's the same consistency as the block. Did you use the spread in this? If so, how did it turn out?

    Does the brown sugar stay gritty?

      Nope! You have to make it this way though, adding the brown sugar to the butter / cream cheese before adding the powdered sugar. If you add the brown sugar afterwards, it will be gritty. (I tried to cheat before and add brown sugar to cream cheese icing and it was horrible LOL)

    I'm very much enjoying the "I know there's something you can put on top but I prefer to do it this way". Sometimes, gadgets can be useful but at other times, traditional methods just work, so why change it? 🙂
