    Omg I also wrap my cakes after taking them out of the oven and they do stay moisture inside. I thought I was the only person doing this. Like always thank you for your videos.
    I love decorating cakes and when I do I enjoy every moment of it especially when I see my client’s face of joy.

    I’ve been watching your videos for days in preparation to make a cake and with my schedule I just felt like this would be impossible to fit in now I feel more confident to bake in advance. And I hear a lot of people nervous to freeze but your video restored my confidence to do it and still have a high chance of a moist cake! So excited to bake🎉🎂

    I’ve been using your doctored cake mix recipe and freezing the cakes like you show. This has been a game changer. I’ll never use any other cake recipe! Never had a cake stay so moist for for several days. Not sure how you came up with all this but it sure works. Thank you many times over for sharing your tips and tricks.

    I wished you could see my freezer right now, I made my little boxess from USPS boxes I had that never used for shipping and cut them down and made the shelving between the cakes , i don't have as much space but I was able to do it and I definitely love it! Thanks for sharing this!

    Thank you for talking about not filling a frozen cake! I did this for the first time a few months ago and after a while my frosting started acting crazy!! I was a total newb so I had no idea what was happening, but months later I realized it was water mixing in with the frosting from the condensation!! After watching this video I realized that's what had happened and now I never do it!!

    What about when you do a crumb coat? Can you frost the cake when you take it out of the fridge or freezer right away or should I let it sit before doing the final coat?

      I crumb coat the cake, put it in the fridge for at least 4 hours so the icing can harden, then remove it from the fridge and immediately add the final coat. I never freeze a crumb coated cake, you could have condensation issues if you do!

      I don't because they are still warm when I freeze them, so they are more fragile and could split if you try to level them when they are warm.

    Hi Karolyn! I was just wondering, I love your doctored cake mix recipe. Have made it several times your way, however this time I made a scratch red velvet cake; but continued with your freezing wrapped cakes. I'm not sure what the minimum time in the freezer can work? Watching this video, I was thinking 3-4 hours? Am I on the correct thought process? Usually I just leave them overnight, but this time I'm in a slight rush. Thank you for all you've taught this 69 year old on how to bake cakes.

      Hi Mindy! I have been in this situation before and have frozen them for about 3-4 hours, like you said. It's enough to get it pretty solid and trap in the moisture. If you're really in a rush, you can wrap them up and skip the freezer. Especially if the cake will be eaten within a day or two!

    Is the freezing essential for the moisture or does the plastic wrap hold in most of the moisture? I'm wondering if I should freeze a cake if I am decorating it only 24 hours later. And if I don't freeze it, would I just wrap it in plastic and leave it on the counter until decorating time? Thanks

      I feel like freezing is better. However, before I froze cakes, I would just wrap them in plastic (when still warm) and left them at room temp until I was ready to decorate. And it was still moist! But if I were baking the day before, I would freeze for like 6 hours and then take it out to thaw. I feel like freezing it does give a better result, but it's not necessary if you don't have the time!

    Thank you for this. I have been icing my cakes frozen an couldn’t figure out why it is sweating on the buttercream after I’ve done final coat and decoration. I was taught that way to let it stay in the fridge to go through condensation phase after icing it frozen and once I take my cake out the fridge it would still look sweaty. I will definitely try it this way 🥰

      I would say about 3-4 months tops. If you freeze them for longer than a week, I recommend double or triple wrapping them in the plastic wrap!

      Hi! If it's only 3 days, I would just keep it in the fridge. I've had cakes in the fridge up to a week and they have been fine! If they are moist to begin with, they will stay moist in the fridge. If you prefer to freeze it, you definitely can. Wrap really well in plastic wrap and freeze. The day before the party, remove from the freezer and put in the fridge (still wrapped in plastic wrap) so it can start slowly thawing. Then remove from the fridge and bring it into a cool air conditioned room to prevent condensation from forming!

      Yes I do! I thaw them and then I spray simple syrup on the layers when I fill the cakes. Just a light mist on there though. Here's a video showing you what I do!

      How much longer? If it’s weeks / months, then an extra layer of protection (foil) couldn’t hurt!

    So I come back Sunday morning like 10am and we need the cake ready for an event at 3pm. I was going to bake the cake Friday night and freeze it but it seems I need 6 hrs for it to thaw 😭 I need another solution. Should I just try to back and decorate and do everything Sunday ??? I remember you say don’t refrigerate them they have to be frozen to store them?

      I would just bake them and wrap them in plastic wrap while they cool. Don't freeze it, just leave it at room temp to cool wrapped in the plastic wrap. That will help trap in the moisture!

      Always after I thaw them from the freezer. Once I unwrap them and level them, I will spray the simple syrup on each layer as I fill the cake. 😊

    Okay new cake buddy. Let's chat for a minute. I have been that person that has been decorating frozen cakes for 18+ years. HOWEVER, I am always open to new techniques. My issue with thawed cakes is my frostings making the cake peel. It's the worst!!! I have a cake this weekend, I definitely want to try frosting it thawed.

    Hi Karolyn! Quick question. Soooo I’ve had some layers in the freezer like two weeks now double wrapped in plastic wrap; do you think they’d still be fresh enough for an order this week??
    I’m only asking cause I know some people say if you’re going to freeze longer than a few days I should double wrap them in Saran Wrap and maybe wrap in foil and put in a freezer bag.

      I think they should be fine! I've used cakes that were only single wrapped in plastic that were in the freezer for 3 weeks with no problem.

      About 3-4 hours depending on the size and how hot it is outside. I want them to be completely thawed (to room temp) before I fill them!

      Depends on the size! I give the larger sizes (9" and above) approx. 4 hours to completely thaw. The smaller sizes need 2-3 hours, depending on how hot it is around you.

      I always lightly spray each layer after they are completely thawed, before I fill the cakes.

      I only keep them in the freezer up to 24 hours. If you want to freeze them longer, double or triple wrap them in plastic wrap and you can also wrap with aluminum foil over the plastic wrap as well.

    I have a buttercream that I'm using for first time its half shortening half butter powdered sugar and only 2tablespoons heavy whipping cream.
    Do u think that it can sit out overnight to set or should I do the dish on top for 2hrs then refrigerate?

      I would always recommend to just refrigerate it when it has to sit out for more than a few hours. It just eliminates any possibility of something spoiling. I'm sure it would be okay if you didn't do it though.

    I have a question:
    Can u store decorated cake( 6 inch three layer buttercream filled rosette cake) in the same cake box you will be delivering in?
    Do u take it out of fridge a few hours before heading to delivery?
    (I love in TX so right now it is soooo hot here🥵)

      I personally store my cakes in the same box I deliver it without any issues. Even on the hottest days. I keep it in the fridge until I'm ready to deliver it. But I cool my car down for 10 minutes or so before I put the cake in there! I wouldn't want to deliver a cake that has sat out too long because the icing will get soft and the structure will be compromised.

      I prefer to thaw at room temperature. If you thaw in the fridge, they will still be cold when you take them out. I personally don't like to fill cold cakes. But if you like to do that, then you can thaw in the fridge.

      It depends on the size. Smaller ones take about 1-2 hours, larger ones up to 4 hours. On the days I thaw my cakes and fill them, I will take them out of the freezer around 7am and start filling around 11am.

      I keep it in there overnight. But you can definitely freeze longer! I would double-wrap in plastic if I were to keep it in there for a week. It will still be moist!

    I have a problem
    I put my cakes in the freezer overnight, took it out the next morning to defrost for about 10 hrs . I iced my cake and the cake was beautiful
    It was very hot so I put the cake in the fridge overnight and part of the day, the party was the next day, the cake stood out for about 6 hrs, customer say that the cake was very dry, what did I do wrong
    1st complain ever

      Oh no! It sucks when we get that feedback, it happens to all of us.
      If the cake was dry, it was most likely over baked. I frequently have frosted cakes in my fridge for 5 days without issue. The cake won't dry out in a few days if it's moist.

    Karolyn, I make an oil based chocolate cup cake recipe. I have noticed that I get oil marks on my boxes. Is this normal? Do you like your cake boxes?

      I like to thaw them completely just to reduce the chance of any issues. If you frost a frozen cake, you could have issues with condensation and / or blowouts. If I had an urgent order, I would bake the cake and let it cool without freezing it, then I would fill and frost it.

      Sometimes the tops may slightly stick, but not too much. And I level the tops off anyway so it doesn’t matter.

      I never frost frozen cakes, I always let them thaw first. Condensation can form on frozen cakes and it could cause issues with your icing!

      I torte, fill and crumb coat while frozen. Structure and less crumbs everywhere. It’s my personal preference. But I don’t do anything fondant. It’s either whipped cream or buttercream. Haven’t had a problem.

      I have been frosting/filling all my cakes while frozen for the past 3 years and haven't had any issues (knock on wood). I've just had really good results doing it this way. I do keep the finished cake in the fridge (usually overnight) and until delivery so it can slowly thaw without the condensation issue. So far, no negative feedback from customers.

    I stacked my cakes in the freezer before they froze so they are abit distorted.. I have no idea what to do as a 1st time baker

      You want to make sure the cakes are completely frozen before stacking more on top. If I have a lot of cakes to bake, I will start a few days early so I can bake and freeze, then stack more on top. I also have two fridges with freezers that I use just for my cakes, so I have a lot of space to spread them out!
