I just made this following your recipe. OMG!!! It is delicious. I also followed your recipe for the doctored cake mix. It made such a difference. I’ll be using doctored cake mixes from now on. The texture and flavor are amazing.
This is one of my favorite filling flavors! The cream cheese really makes it silky smooth. And no shame in the doctored mix game. People love the flavor / texture!
I'd so love love love to see you work with chocolate and ganache more. A whole chocolate cake tutorial. Ganache filling with ganache icing and ganache drips and ganach icing swirls on top. Just to get your advice on the perfect ganache ratios for specific uses. Your channel is great without it, but I find myself trusting your tutorials and ideas more than any other influencer or baker and it's the only thing I wish I could see more of. 😊

I have learned so much from watching your videos and want to thank you for all you do. I do have a question and hope this question is not crazy? Is this chocolate cream cheese filling perishable? If it is, how do you let your cakes settle overnight if filled with this icing?
You can replace it with butter, but will have to decrease the amount of fluid you add. And it may not hold its shape as well. But it will still taste good!
Hi Karolyn. Is this a crusting buttercream? I just watched your video on using impression mats on buttercream and I’m wondering if that technique would work with this frosting. Thanks!
I wouldn't recommend icing a kake with a cream cheese based icing as it can get too soft and not keep its shape. If you want to ice a cake with chocolate icing, I recommend using my American Buttercream recipe (I have a video) and adding cocoa to that the same way as I do in this video. That will crust and stay stable.
Since this has cream cheese, I only use it as a filling. I don't like to frost cakes with cream cheese icing, I feel like it's hard to smooth and doesn't hold up really well. If I have to frost cakes with chocolate icing, I will use my American Buttercream recipe and add 1/2 - 3/4C cocoa to that!

You can definitely use milk in place of water! I haven't noticed a huge difference, which is why I stick with water.
Can you use non dairy cream cheese?
I never have, but I don't see why you couldn't. If you try it, please let me know how it turns out!
