Love this! Looks super easy man and definitely interested in seeing the results in a pellet smoker. Agree with you, for a beginner like myself a brisket is very intimidating but ima give it a shot!

Looks great. Good to see different timing. Hot and fast. Sometimes you don’t have time for that 18 + hour cook.
There is a time and place for everything, for sure! Those long cooks can take a toll. Haha I do love being able to make a fast brisket!
Hey Alonzo, happy 4th of July! I got a question. I know you mentioned this in your videos, but what do you recommend better, wrapping your brisket in butcher paper, or foil? I want a nice bark, but I also want the meat to stay moist. I have smoked briskets with foil and they come out super moist, but I want to try butcher paper. I’m just worried that the meat will not be as moist.
Happy 4th bro! I most definitely love using butcher paper over foil, that’s just me! I’ve found they will come out super moist just make sure to hold your temps and be patient! It’ll take a little longer if you use butcher paper but imo it’s worth it!

Great video man! Did you have the water pan in? If so, was it empty? Also do you always use briquettes when going hot n fast? I heard lump was better as it runs hotter... thanks!
I keep the pan in, it’s empty and covered in foil! I will use lump at times, but I just haven’t picked any up lately! I do like the way it runs on the WSM for sure! Briquettes have just become a thing where I use them so much I know exactly what temps I’m going to get!

@@GulfCoastSmoke Is the reason you don't use water in the water pan because you can't get your WSM hot enough with water in the pan? WSM newbie here just trying to learn the ropes... there's so much conflicting info out there not sure what to follow and why.... thanks in advance!
Truthfully, it’s because I had originally started with the water pan in and the clean up was disgusting. Lol. I don’t mind a mess, but it’s pretty gross. So I just cover the top with foil and the cleanup is a breeze! I just played with mine till I got comfortable and I feel like I have it dialed in now!

I used to think you just threw a brisket on a pit and left it there forever lol boy was I wrong...
I think that's what we all thought when we first started to 'que! Takes some time to learn but it's worth it!
