You missed the one and only best mechanic chronograph in the market the Sea-Gull chronograph known as 1963 or D304 with ST19xx caliber based on Venus 158 who was sold by Swiss to Chinese. A chronograph which was used by PLAAF pilots. Though Baltic wears the ST1901 caliber.
2. And how could we forget to mention Citizen. They are absolutely fantastic price/value solar-driven chronographs, from as little as US$200 all the way up to even US$1000+, many dozens of models to choose from.
I also recommend the Forza by Geckota, 1963 Seagull, Dan Henry, Lorier, Islander Amerigraph, Nezumi Voiture, Straton Speciale.

I have a Seiko Coutura. I'm not crazy about quartz watches but I can't deny how good this one is.
I'm new to watches. Would you guys get the baltic or furlan marri?
Let's cut to the chase. For a chronograph to be of any practical use for dead-reckoning low flying navigation , it has to have a totalizer with 12/60 minutes dials like the ones on the old German Luftwaffe Type B Flieger watch; that is, an outer dial of 60 minutes with one minute intervals and an inner dial of 12 hours. Some Seiko chronographs with a 7T92 movement has those dials. One can buy one for about 100 bucks... All the rest are obviously beautiful watches for your collections.

I’ve had the Seiko panda coming on a year now. I wear it 3-4x a week!
The Junghans form C at $600 beats everything else under $1000. Currently stuck on that for an affordable chronograph for daily use...
I'm surprised the Tissot PRX Powermatic 80 didn't make the list, as it's an inexpensive mechanical watch with a great reputation.

It amazes me that no one brings up the absolutely useless 24h sub-dial on the VK63 movement.

Since you mentioned the Baltic chrono which uses the Chinese ST19 movement why not the OG?? The 1963 chrono which you can find all over Ali Express for under $200.

3. Last (but the list could/should be continued of course) there is the newest Orient Mako Chrono /solar series. (also called Neo 70s) like the already-famous WV0041TX
They also have a more classy series "Classic" like the RA-KV0402S10B
Or an earlier/cheaper series called "Sport" like the RA-KV0002L10B
