Easiest Gluten-Free Vegan Loaf Bread - Oil-free, Refined Sugar-Free, WFPB

  • RECIPE:
    2 and 1/2 cups millet flour
    2 1/2 tsp baking powder
    1/2 tsp baking soda
    2 tbsp ground flax or ground chia
    ¾ tsp salt ( reduce or eliminate to preference )
    2 and 1/2 cups water
    1 tbsp apple cider vinegar
    1/3 cup whole psyllium husks
    2-3 tbsp date syrup (optional)
    Sesame seeds for topping
    In a bowl combine the dry ingredients, except for the psyllium husks. In a separate bowl combine the wet ingredients and the psyllium husks. Let rest for 5 minutes until a gel like consistency is achieved.
    Combine the wet and dry ingredients. Wet your hands and add dough to a loaf pan.
    Bake in a preheated oven at 350 F for 50-60 minutes. Remove and allow to COOL COMPLETELY before cutting.
    Enjoy!
    Note: If the loaf is at all gummy it means it wasn't cooked long enough.

I have tried the buns recipe (exact same measurements as this bread just cooked in bun molds) 2x now, once with finger millet and once with pearl millet, and cannot get them to cook all the way through even at 90 minutes cook time. The pearl millet flour, which is lighter in color than finger millet, buns/bread was nowhere near as light in color as his in the video. It occurred to me that the brand of flour may be the culprit so I'm asking people who made this successfully what kind and type of millet flour they're using.

    I remember when I used to make fun of Vegans and people allergic to gluten. Then I ended up with Pneumonia and a severe case of bacteria lung infection. I went through the worst of it for almost 4 to 5 months and was still trying to get over it by month 6. I ended up with my lungs and intestines inflamed and filled with mucus. Wont go onto details about my other conditions but know it was no pinic. I ended up doing a full fluid water and herbal tea based diet for 2 weeks which helped allieviate a lot of my mucus build up. Yet I was starving. Wasnt many options on foods I could eat anymore. Trying to navigate on what foods I can and shouldn't eat eliminated majority of my past options. Thus I Praise God for people like you existing. You are a blessing to this world and never forget that. You have no idea how many lives you are changing with this channel. Now I can enjoy meals I missed but with a different more healthier take to it. Thus thank you so much.

      @@healthyveganeating Your channel inspired me to try so many new things. I've used this bread recipe to make dough, your cheese recipe but used organic kiki milk instead of water which melts the cheese a lot more, your king mushroom recipe for bacon as a topping all in order to recreate pizza. You have no idea how good it felt to eat pizza again.

    This is sensational! I made it with half millet flour and half sorghum flour. I also did 1 c. Chopped Sun dried tomatoes and 1/2 c. Chopped Kala mata olives, used 1/2 bulb roasted garlic instead of full bulbs. And most importantly, I did 50 minutes. When I took it out of the oven, I used a thermometer to make sure it was at least 209 degrees, which I find is ideal for determining if GF bread is done baking. I was initially suspicious of using that much psyllium (which I almost always use for baking GF bread), but it was spot on. Bread is delicious. My husband actually said “yum, this tastes like bread!”. Thank you for this most amazing recipe.

    You just seriously changed the game for me. I gratefully appreciate your videos and recipes. I am learning that I am allergic so much and that I have felt so lost and discouraged and disappointed in the food that I buy from the stores, and I am still getting sick. I've started using your recipes, and food is enjoyable again, and I'm not wasting time and money on food that is bland and still full of bad ingredients. I just recently started watching you.     I just finished baking this bread at 9:30 pm, I was so motivated with success earlier with making the baked mushroom it got me cooking. This bread is so delicious and light.       @@kayedarbee334 Hello, I used Arrowhead Mills Organic Millet Flour - Gluten Free - I purchased it at Whole Foods. I will being making the buns, I just brought the silicone bun mold non stick baking pan. All the best with using this flour for better results. 😎🍞

    I've used millet in combination with other flours. You have inspired me to allow millet to shine on its own. Plus, I have typically added psyllium to the dry ingredients but hydrating it with wet ingredients makes more sense. You are appreciated. Enjoy

    Javant , this bread is to die for !! Seriously since I started to follow you I went on Amazon and purchased 100$ of ingredients that I needed to create some of your recipes . Today I made your bread first time I was using millet flour the taste is out of this world , my bread took 73 minutes to bake my oven is on the lower side next time maybe I should bake it to 335F will see . The texture is unbelievable so yummy I wish I could post a picture , my cheese is in the refrigerator to set , I baked the pumpkin muffin it needed to bake a tad longer but I reheat it to eat . I added more spices and I could have used more .
    I also made your tzatziki sauce gosh I went to heaven and came back !!! Thank you

    I promise you this bread is better than store-bought bread any day any day I go to 12 step recovery for food addicts anonymous and I always have relapse because I missed the food so much but thank you thank you to this man this man this one man who made all this delicious foods which I can now eat and bread with something that I miss so much because we couldn't eat flour or sugar and this is so much there and I love it

He’s 75 and just got a pacemaker and his cholesterol is high and he’s taking cholesterol pills but hopefully I could help him get off the pills. Thank you again.

    I just made this and OH MYYYYYYYYY!!!!! I will not be buying another store bought loaf ever again 😆. It is nearly impossible to find a gluten free bread that doesn't taste like cardboard, let alone that is free of seed oils/gmo's. I am over the moon about this recipe.     I go to 12-step program for no flour weed and sugar called food addicts anonymous and I always had relapses after 2 3 months because I miss something like bread and all the stuff that I enjoyed and now thanks to this man I can now have bread which I promise you it tastes so much better than the junk I was eating before in the stores so much better less ingredients it's healthier for you my stomach is not bloated I can think clearly I mean this man is an angel

    I made the bread tonight, and cut the ingredients in half, (maybe not the baking soda) it made a good size loaf, but wow!! I do not buy bread, now I can have sandwiches. I like knowing what’s in my bread. I’m not fully Vegan yet, however, you are making it easier, thank you!!

    I have tried a few gluten free breads and this one is the absolute best! It's a game changer. Millet has so much goodness in it and the psyllium is so good for friendly gut bacteria.     Dear lord thank you for this recipe !!! I made it again , this is a no fail recipe damn it’s good !!! I only used 1/2 tsp shy of salt and maple syrup for the sweetness I bring my maple syrup from Canada when I go visit , I can’t beat the price I would pay triple the amount in US and our money is worth 30% more in Canada you can’t beat that .     Hi Javant...Made this and it was delicious! Thank you! A couple things I learned......1. When grinding my millet seeds into flour in the NutriBullet, two cups of seeds translated to 2&1/2 cups flour (lightly measuring the flour spoonful by spoonful, not tamping down) 2. When I was finishing up mixing the wet with the dry, I was able to pour the dough into the loaf pan, no need to pick up the dough to transport.

      I haven't had an issue cooking it in a glass pan. However, you could line your pan with parchment paper if you are concerned.

    I have this bread coming out of the oven in about 15 mins (75 mins baked total just to make sure it isn't gummy). Since I've never had millet before, I used 1 cup millet and 1 1/2 cups chick pea flour, and 2 tap coconut sugar . It has a yellowish tint, smells and looks gorgeous!!!!!! . As much as I love bread but cannot have it anymore this is going to be a hit often !!!!! I want to thank you soooo much for your channel and all of your recipes.

    Vegan ingredients are expensive but definitely worth the investment. Initially, I thought nah but now that I've been making my own food and actually enjoying it all, I'm all in! Never knew there were so many different types of millet flour. Please tell me which brand you recommend recommend from Amazon.

      There are some brands that are more bitter than others. I share my recommended food brands through my App. However, my main consideration for millet is that the brand is organic and sprouted. If this is not so important to you, then any brand should do.

    Made this yesterday and it's sooooooooooo goooooooooooood!! I knew I'd love it because I love your millet buns recipe. I'm actually having a slice with your delicious cheese on it, toasted of course. I was just looking at your lentil flatbread video and wondered if you've ever made a wheat-free pita bread. I eat homemade pita with homemade hummus every day, but I do use whole wheat flour. I'm not very adventurous when it comes to experimenting, so I thought I'd ask you, since you're my go-to recipe guy!

      Needing help! What brand and type of millet flour are you using? I have tried the buns recipe (exact same measurements as this bread just cooked in bun molds) 2x now, once with finger millet and once with pearl millet, and cannot get them to cook all the way through even at 90 minutes cook time. The pearl millet flour, which is lighter in color than finger millet, buns/bread was nowhere near as light in color as his in the video. It occurred to me that the brand of flour may be the culprit so I'm asking people who made this successfully what kind and type of millet flour they're using.

      I went to whole foods store and got the organic millet flour. I believe thats the only millet they sell. The brand is arrowhead@@kayedarbee334

    I LOVE this bread, but I start by cooking at 450, for 10 minutes - then turn it down to 350 - for 50 minutes... then it turns out fantastic with a perfect texture instead of being kind of wet inside...

    By the way I took the apple peels from Thanksgiving cuz I bought a whole bag of horse apples from the farm which only cost me $6 for like 60 lb of apples and I'm not exaggerating and I took the pills and made apple cider for it and it is so much better and so much cheaper than the stuff I was buying

    So excited to try this recipe. I am going gluten free and bread was the thing I know I’d miss most. This will be a life saver. Does the type and size pan matter and how do you store the bread? Is on the counter in a bread bag work?

      Im using a large loaf pan here. You can adjust the recipe accordingly if you have a small loaf pan. This bread can be kept in an airtight container on the counter for a couple days or in the fridge. It also freezes well!

    I am blown away by your recipes! So good to see oil and sugar free recipes. I haven’t cooked with oil or sugar in over a decade. I also avoid wheat, soy, rice and corn. I loved corn bread. Millet is a good substitute for corn bread and it is so much more nutritious.

    Good day. I just found your channel. Thank you for sharing. One thing I cannot get out of my diet is bread. and I've been trying to bake my own bread(from 2020) with the help of other channels with no success. most of the time the bread will not cook inside. store-bought bread makes me constipated. Now I want to try your Millet bread.
    another thing I have realised is that our measurements differ from country to country. I'm from South Africa and 1 cup is written 250ml, 1Tbsp is 15ml, 1 tsp 5ml. I don't know if that's the same with your measurements or it doesn't matter what my cup measurement is as long as I follow your guidance.

    Hi Javant! I ordered some Millet flour and Mung flour was sent by mistake. I was lucky as I was told to keep it. I do have millet flour on the way. In the meantime, would Mung flour work for this recipe? If not, no worries. Any recipes for mung flour? Thanks! ~H

    Thanks, Javant! The measurements for the bread vs the buns appear to be the same as the buns with the addition of 1/2 tsp of baking powder for the bread (2-1/2 tsp total), and more optional date syrup. I use whole psyllium from Organic India, at Whole Foods or online.

    So I just made your bread. And I had psyllium husk powder on hand. Is that what you used? After 5 minutes, I checked the liquid mixture it was a solid block of Jell-O like consistency. It was really difficult to mix that flower into that Jell-O block. Is there a difference between psyllium husk powder and whole psyllium husk?

      Yes, it's important that you use the whole psyllium husks as stated in the recipe.The powder is ground fine and will throw off the ratio of liquid.

    I get excited when I see GF bread recipes. However, my body does not tolerate psyllium, so I can't make your bread recipes. They look so good!! Oh well. I'll find something that works.
