How to Make Millet
This recipe is a guide to cooking dry millet. Most recipes call for using 2 cups of water per 1 cup millet. I advise using 1 ¾ cup of water per cup, unless you want a more porridge-like consistency.
Yields: about 3 cups
Cooking time: 15 minutes
Cooling time: 10 minutes
1 cup millet
½ teaspoon kosher salt
1 ¾ cup water or soup stock
First, rinse the millet in a fine mesh colander under cold running water. Add the rinsed millet, salt and water or soup stock to a small pot. Cover with a lid and bring to a boil, then reduce to a simmer for about 12 to 15 minutes, or until there is no longer any liquid at the bottom of the pot.
Remove the millet from the heat and let it stand uncovered for 10 minutes before fluffing with a fork.

Please note millets need to be soaked for atleast 4 - 6 hrs before cooking

I soak mine for 48 hours in water and a splash apple cider vinegar.
