My wife and I went to Barbacoa El Pisa 1 today. Very fun experience and extremely local. The barbacoa is incredible. It was a very family oriented scene. Lots of enjoyment. I highly recommend hiring a driver to get to and from México City because it is an hour away and not a straight shot. Get there by nine a.m. Thanks Mark for introducing this outstanding experience to us.

Some advice to anyone else interested in visiting and trying Barbacoa. 1. Make sure you are buying the Barbacoa from the pit lined with agave (maguey pencas) and not the foil wrapped, oven cooked one. 2. Make sure you get the conzome (fat drippings made into a soup) to accompany the Barbacoa. 3. To visit Teotihuacan (the Aztec pyramids) , BE THERE EARLY AND DURING THE WEEKEND! avoid the week when Spring will be starting, as it is said that is when the pyramids are full of celestial energy. 4. ENJOY EVERYTHING MEXICO HAS TO OFFER! VIVA MEXICO! 🇲🇽🇲🇽🇲🇽

Glad to see you wearing a hat for a change. My understanding is the Teotihuacan predates the Aztec Empire and, in fact, the Aztecs themselves didn't know the history nor origin of the Teotihuacan pyramids.
That's right Don. The Teotihuacan is a more ancient culture, predating the Aztec empire by hundreds of years. This site was already abandoned when the Aztec culture was peaking. Various tribal empires rose and fell before the Spanish invasion, primarily due to natural causes. "Aztec" is a term later coined by Europeans, to describe primarily the Mexica people, the most powerful of a loose alliance of 3 tribes whose cultural center was the city on the lake of Tenochitlan. This city on the lake is actually current day Mexico city, Mexico itself being named after that primary tribe of Mexica. The "Aztec" civilization is remembered primarily because they were the native power during the Spanish invasion. The city on the lake of Tenochitlan was described as one of the most beautiful and surreal sights the Spanish had ever seen. The open air markets were many times larger then any in Spain. After conquering the Aztec, the Spanish drained most of the lake, however the complete draining of Tenochitlan, modern day Mexico City happened as recently as the 1940s. All that remains of the city on the lake is a small area of protected rubble in the center of Mexico city.

Karmini Parsan by the time they remove the stones and the agave leafs the ovens had been burning for more than 12 hours so they’re not burning hot..they’re about as hot as a cup of coffee. In this place they sale you the meat by the kilo and usually comes with salsa and some tortillas but some other barbacoa joints only sale you the meat but there’s folks there who now this and they bring home made tortillas to sale and some others may sale you the salsa as well , but regardless on how the setup is the meat is the main course but you better get there early because it sales quick!

It's strange though- I've traveled through many countries, and have worked in US restaurants and I rarely see people use gloves? I think people have an imaginary idea of what goes on in restaurants, then there's the reality.
Lenin Raju, every time I’ve been to a home of a Mexican person, or a lot of their cities, they are very clean. Perhaps like the previous commenter said, many people’s first mind when they think of India, is cities full of garbage (even the temples and holy places are just disgustingly dirty!) the Ganges floating with you-know-what, grime and disease EVERYWHERE. Most Mexican cities are very clean in comparison. Even the poorer villages are clean. Maybe it’s an unfair judgement that people have towards Indian street food, but certainly the nation and its cities don’t do much to change their image.
Lenin Raju Not just in Mexico or India, there's a lot of people criticised about the people in my country Indonesia serving the food with barehand. I do studied food hygiene at my university, but I never against the way people serves the food (although yes, it would be better if they handle it with glove). But that's the way each country has their food culture, especially the street food. And I always love eating street food, great taste with great value. I've never been to Mexico or India, but just by seeing Mark's video I really craving for that kind of food here.
theknightof86 I know what you feel there. When I first went to Singapore, I came across food stall that serves Indian cuisine. Yes, at first I'm kinda had a weird look (maybe a bit cringed?) at the way they served it, but I was blown away when I tasted it. We have to be open minded with the culture each country has, and food is one of the best way to explore it.

Those chiles may actually be chiles perón, AKA chiles manzanos. They are related to habaneros but larger and less picante.

My understanding is the Teotihuacan predates the Aztec Empire and, in fact, the Aztecs themselves didn't know the history nor origin of the Teotihuacan pyramids.

That's right Don. The Teotihuacan is a more ancient culture, predating the Aztec empire by hundreds of years. This site was already abandoned when the Aztec culture was peaking. Various tribal empires rose and fell before the Spanish invasion, primarily due to natural causes. "Aztec" is a term later coined by Europeans, to describe primarily the Mexica people, the most powerful of a loose alliance of 3 tribes whose cultural center was the city on the lake of Tenochitlan. This city on the lake is actually current day Mexico city, Mexico itself being named after that primary tribe of Mexica. The "Aztec" civilization is remembered primarily because they were the native power during the Spanish invasion. The city on the lake of Tenochitlan was described as one of the most beautiful and surreal sights the Spanish had ever seen. The open air markets were many times larger then any in Spain. After conquering the Aztec, the Spanish drained most of the lake, however the complete draining of Tenochitlan, modern day Mexico City happened as recently as the 1940s. All that remains of the city on the lake is a small area of protected rubble in the center of Mexico city.

Karmini Parsan by the time they remove the stones and the agave leafs the ovens had been burning for more than 12 hours so they’re not burning hot..they’re about as hot as a cup of coffee. In this place they sale you the meat by the kilo and usually comes with salsa and some tortillas but some other barbacoa joints only sale you the meat but there’s folks there who now this and they bring home made tortillas to sale and some others may sale you the salsa as well , but regardless on how the setup is the meat is the main course but you better get there early because it sales quick!

Everytime food channel in southIndia is criticized for hygiene habits like gloves....,Just see them..., I'm not againt the one who is doing this...., I'm against the one who criticise that.... You should see the kind hearted who serves their best cooking skills to you
Lenin Raju there are many comments on all of the Mexico videos also criticizing the hygiene and lack of gloves. It's strange though- I've traveled through many countries, and have worked in US restaurants and I rarely see people use gloves?
I think people have an imaginary idea of what goes on in restaurants, then there's the reality.
Lenin Raju, every time I’ve been to a home of a Mexican person, or a lot of their cities, they are very clean. Perhaps like the previous commenter said, many people’s first mind when they think of India, is cities full of garbage (even the temples and holy places are just disgustingly dirty!) the Ganges floating with you-know-what, grime and disease EVERYWHERE. Most Mexican cities are very clean in comparison. Even the poorer villages are clean.
Maybe it’s an unfair judgement that people have towards Indian street food, but certainly the nation and its cities don’t do much to change their image.
Lenin Raju Not just in Mexico or India, there's a lot of people criticised about the people in my country Indonesia serving the food with barehand. I do studied food hygiene at my university, but I never against the way people serves the food (although yes, it would be better if they handle it with glove). But that's the way each country has their food culture, especially the street food. And I always love eating street food, great taste with great value. I've never been to Mexico or India, but just by seeing Mark's video I really craving for that kind of food here.
theknightof86 I know what you feel there. When I first went to Singapore, I came across food stall that serves Indian cuisine. Yes, at first I'm kinda had a weird look (maybe a bit cringed?) at the way they served it, but I was blown away when I tasted it. We have to be open minded with the culture each country has, and food is one of the best way to explore it.
