How 500 Pounds Of Lamb Barbacoa Is Cooked Every Weekend In Texcoco, Mexico | Big Batches

  • Inside El Pica 1 in Texcoco, Mexico, the original barbecue of the Americas is still being cooked low and slow inside of pit ovens. The restaurant’s lamb barbacoa recipe starts with wrapping lamb in long maguey leaves, and cooking it overnight for 11 hours to create a tender barbacoa full of sweet and smoky flavors. The restaurant sells around 500 pounds of barbecue every weekend for $10 a pound, serving nearly 1,200 people in two days.
    We visited El Pica 1 to see how to make their lamb barbacoa, and what it takes to make such Big Batches.

    Lord have mercy. Ima cook Lamb one day like this when I get my own place. Mexican food is my top 3 food on the list. Can never get enough of it.

    As a New Zealander all I can say is for anyone who eats meat there is literally nothing more delicious than Lamb. But watching these people working together is just so meaningful to me because coming together to cook and eat together is such an intimate, bonding moment.
    It's something we all share and whether it's family, friends or even complete strangers. Breaking bread together or in this case cooking lamb its the ultimate human experience.

    Hell yeah!! I’m making barbacoa for some Australians this weekend 🤤. I never thought it would be so rewarding to cook for other nationalities that never had authentic Mexican food before.

    This is located at La Purisima, Texcoco. I have eat there several times and it never disappoints, the place is really pretty some tables are "private" and surrounded by trees (very unique) and the pulque they sell is top notch.

    I've been here, this place gets slam packed and they're sold out of barbacoa by 1pm. Food is amazing. Definitely would recommend taking your family there!

    I think there is something quite special that even though there is demand for it he keeps the capacity he can sustain, plus 500 pounds and sells out weekly is absolutely astonishing. I love the care, time, and effort that goes into all aspects of making something the traditional way. I hope they continue to have success for generations to come ☺

      It's intelligent planning and guests expect every week the same. Come early to get the choice cuts and when it's sold out, we must return next week.
      Working friends are compensated and the operation can continue with a repeated perfect formula .

    I love how my parents would take me and my younger siblings to Texcoco, Mexico every year during school vacation the food was always great. I now have 3 homes in texcoco and will be taking my kids in December for 2 weeks let’s hope they like the food.

      I agree with the commenter above me. You are missing out. A lot of Mexican places around me don't carry lamb because it's a little bit pricier but carnitas are very similar just with pork instead of lamb.
      I really wish more people would be willing to give Mexican food a try outside of just asada tacos and burritos. I wish more people know how delicious lengua, ojo, y cabeza are.

      If you are in the USA, you should able to find someone who cooks it. Mexicans are all over the states and Barbacoa is very popular. With that being said, there’s always someone makes it.

    Man you really have to appreciate the ingenuity behind developing this technique. I don't know what the history of this method is but I'm really curious as to how it was developed. Not to mention the resulting food looks spectacular.

      Actually this way of cooking was developed by the Olmecs they wrapped the meat in banana leafs they transmitted this knowledge to the Aztecs, but in central mexico there are no banana trees, so they improvised with what they had, and there is plenty of maguey all over central Mexico. Mayans did the same, but with banana leafs annato seeds, local sour orange, and created cochinita pibil.

    Everytime I eat a barbacoa or a good mole I always get this huge sense of pride that the Raza has managed to preserve thousands of years of culinary tradition, going back to the old country and seeing the lady's make tortillas from scratch with a a metate is just an incredible experience. Plus the diversity of our cuisine is something that is extremely understated.

Consider this: The combination of beans and rice creates a complete protein. Now, how on earth did the Aztecs and the Mayans figure this out thousands of years ago (beans and rice are a staple of Mexican cuisine)?

    Being a "live to eat" sort of foodie, food videos are always a treat to watch for me. Add to that the delicious, tender lamb that they probably cook here, every weekend, and my delight can be imaginable by all my fellow foodies out there.
    But despite all this, my takeaway from this video today, is that one sentence of Saul that sums up the key to his success - "It's not luck. It's work. It's about being consistent."
    And for this most important lesson of life, I thank you, Saul. I salute your hard work, my friend. I look forward to tasting your lamb barbacoa someday :(

    Now I wanna build me one in my backyard. In the states people always telling everyone how barbecue started in the u.s somewhere in the northern states. And I am like wtf Barbecue started way before the English came to New world. I love the pit barbecue embedded in the ground like that.

    Everything he does is similar to what we do in parts of India except the leaf being used is banana leaf. Once the meat is surrounded in the leaf, the whole thing put inside a jute bag and lowered into a pit which has coal or wood that was lit up a hrs before. Once lowered, the pit is filled with mud and allowed to cook for hours. Once done, the mud is removed, the jute bag is lifted up, then banana leaf is removed and then you have the cooked meat with all the spices added to it. But what is in this video is similar in idea, but I wonder what flavors that leaf adds. Great job and glad to see how well it was done and people enjoying it.

    In the northern part of Mexico we do it in a different style and we use beef. Both are really good. The majority of Mexicans go for barbacoa, bofes, and menudo every Sunday.

      Another thing to note is this BBQ is being done at high altitude, over 2,000m/7,000ft.
      That is why you need to have plenty of moisture in your ovens. You have make adjustments compared to cooking at sea level.

    Man, just the SIGHT of the lamb cooking hits me with so much nostalgia that I feel like I can smell and taste it through my tablet. My Abuelita wasn't a big fan of lamb but we still do the deep pit style barbacoa carnitas.
    A lot of people slept on barbacoa like this because it used to be cooked in an actual dirt hole. Line the hole with big green leaves, wrap the meat up and toss it into the hole with charcoal. Then you bury it for a few hours. Most places that make it don't use dirt holes anymore but the technique is basically the same.
    Long story short, deep pit barbeque makes some of the most tender, juicy, smoky, savory, spicy and sometimes sweet meat you will ever have. If I was going to pick one dish to give to someone to judge the entire Mexican food culture on, it would probably be deep pit barbeque.

    Lamb is my favourite meat, its a staple in Australia. I was pretty surprised the first time I saw how popular it is in Mexico! I would really like to try Mexican lamb dishes, they are completely foreign to me and would be exciting to try.
    Like lamb is really popular there, I wonder why its not much of a thing in the US? Is it more popular closer to the order maybe?
