@@milkman3873 It’s not a formal custom. It’s just part of what can happen with leftover turkey after Thanksgiving. I wish they had served proper roast turkey instead, but it’s not like I’ve never made a sandwich with leftover turkey (and mustard). But to substitute this leftover meal for actual fresh roasted turkey? That’s not the genuine experience.

My mother made the absolute best whipped sweet potatoes with toasted marshmallow topping. And yes we ate it as a side dish alongside the turkey and everything else. It was a nice contrast to all the savory things on the menu.
The tradition of doing this dates pretty far back to the beginning of the 20th century- c. 1918. My mother called it “candied yams with Marshmallows.” Mom was born in 1921, and she was expert at making this dish. Her sweet potatoes or yams were always super creamy and not too sweet, and the marshmallows were absolutely flawlessly toasted to a pleasing golden brown.

And it IS that good. The key is the moist maker on the middle. Its a 3rd slice of bread dipped on gravy and placed on the middle like a big mac.
