How to make Chicken Biryani at home!

  • Tender chicken in a richly spiced sauce, layered up with fragrant, flavour-packed rice and topped with saffron and thinly sliced fried onion. This Chicken Biryani is one of those special dishes that gets passed down through generations. Second helpings are a must!

    Ingredients for the Chicken Biryani:
    • 575g chicken thigh fillets, chopped in half
    • ¾ cup natural yoghurt (full fat)
    • 2 tbsp vegetable oil
    • 4 cloves garlic, minced
    • 1 tbsp minced ginger
    • 2 tbsp tomato puree
    • ¼ tsp asafoetida (optional)
    • ½ tsp turmeric
    • 2 tsp garam masala
    • ½ tsp ground fenugreek
    • 2 tsp ground coriander
    • 1 tsp cumin
    • ¼ tsp cinnamon
    • 3 cardamom pods
    • 2 tsp mild chilli powder (go for medium or hot if you like it really spicy)
    • 2 mild green chillies, roughly chopped
    • 1 ¼ tsp salt
    • 1 tbsp fresh lemon juice
    Par-boiled rice:
    • 1.5 litres water
    • 2 tsp salt
    • 5 cloves
    • 1 tsp cumin seeds
    • 3 bay leaves
    • 2 cardamom pods
    • 450g (2 ¼ cups) white basmati rice
    Fried onions:
    • 4 tbsp vegetable oil
    • 2 onions, peeled and sliced
    Also:
    • 3 tbsp freshly chopped coriander (cilantro) (plus 1 tbsp more for serving if desired)
    • 1 tbsp freshly chopped mint leaves
    • 1 tsp saffron threads
    • 3 tbsp milk
    • 3 tbsp ghee, melted (or use unsalted butter)
    • 2 tbsp toasted flaked almonds

    Adding fried onions while marination will give more flavour to the chicken
    Half part ghee and half part oil will add more aroma
    You could simply add more garam masala instead of extra cinnamon powder
    No asafoetida and fenugreek in briyani plz
    Rose essence and roasted rasins and cashews will add richness to the biriyani

    That looks absolutely lovely..ive been making curries for 20 years.have a few indian friends who own restaurants and they give me some of their secrets. Ive never put puree into a biryani. I just use fresh tomatoes for sweeter flavour and bhuna the onions tomatos n spices first...but you can make a great looking biryani. I will try yr recipe tonight. Get back to you tomorrow. Looking forward trying it. 👍👍👍

    Just cooked this recipe and although I made a couple of mistakes, overall it was fantastic. I managed to get the chicken to stick to bottom of my cast iron pot and I thought it was a good idea to cut the thighs into four (big mistake), personally I would prefer a bit more chicken. The rice cooked perfectly and the marinade is absolutely stunning, in fact I'm going to ditch my current tikka recipe for it.

    I love how Indians state they are Indians like they are an authority on Indian food. It’s nonsense. Some of the very best Indian food in high end restaurants and hotels around the world is made by non Indian chefs. Worlds barriers are coming down folks. No one cares if you’re Indian or anything else; in this situation all we care about is how it tastes ❤️

    I am with Shinryuken15 below. I had Pakistani and Indian neighbours and the Pakistani lady fed me now and then and it was sometimes Biryani. I have seen recipes for this and wanted to make it myself but as Shinryuken15 said it seemed difficult. As you have done before you have made it understandable and I do not care if I eat this for a week it shall be done. My Pakistani lady also added Star Anise and her rice was ambrosia. Sadly they have moved so I will have to make it myself. :-)

      If you look up Rick Stein's chicken and rosewater biryani recipe it's quite simple but comes out great.
      I'd add whole spices to rice (which he doesn't say in recipe)
      Add garam masala to chicken just before taking off heat. Also kewra water is fine if you dont find rosewater.

    I make biryani in the traditional way and we never add cooked rice two uncooked chicken. Also it’s important to use whole spices while making the chicken

      The rice is cooked only for 5 mins. That's why It needed to be cooked longer with the chicken. This one is also traditional, called Biryan in Persian. That's how they are made in Iran. She also added saffron, also traditional. I think you're talking about the Indian one or the Afghan one, which might be different from this one. Indians and Afghans also use more chillies and black pepper in their biryanis. But they are too hot for other people.

    I made this last night and it tasted amazing, didn’t have any saffron or Ghee but don’t think it mattered. My hubby had seconds! Made your cottage pie for tonight and meatballs for Friday! Next on my list I’m making your chocolate cherry cake 😋 🍒 🍫 easy to follow videos thank you xx

    I dont have a saucepan so I used a regular pot and the whole chicken got stuck at the bottom :( any tips on what I should use instead? Maybe a non stick pan? (Or will that be too spread out?) however, I have to say that despite the stuck chicken the biryani came out AMAZEBALLS!! And this is coming from an indian chick.. thanks so much for the recipe!!

    Definitely demystified the biryani, thank you! Did you not need to wash the rice first because you cook it twice?

      So I don't know exactly what variety of Basmati rice she used but ideally the rice for Biryani should be fluffy and each grain should stand on its own. If your Biryani rice is sticking to each other then you didn't cook it right. That's the traditional way of judging Biryani. But for home cooking I guess it's ok if your rice is a little sticky. Btw, to get perfect, fragrant, fluffy basmati rice too need to soak it for atleast half an hour. Wash it. Semi cook it in lots of water, drain the water, heat up some ghee in a pan saute some fragrant spices in it like cardamom, bay leaves, cloves etc and cook the rice again, this time with much lesser amount of water. And then add the cooked rice to cooked meat and let it sit on heat for sometime so the flavors can mingle. This is a much longer process but that's how authentic Biryani was made.

    Really good recipe! Can you please in future use the whole word for 'tablespoon' & 'teaspoon' in the description because I accidentally put 2 tablespoons of chillis in, instead of 2 teaspoons 😆 The fun of having dyslexia 😆
