My Quick and Easy Chicken Curry Recipe | Perfect Family Dinner

  • A quick and simple mild chicken curry recipe with bags of flavour. Ready in 30 minutes, it makes a great go-to mid-week meal for the whole family.
    Freezer-friendly so you can make a big batch and save some for later.

    Ingredients for the chicken curry:
    2 tbsp vegetable oil
    3 chicken breasts - - (approx 500g/17.5 oz) chopped into bite-size chunks
    1 large onion - (or 2 small) peeled and finely chopped
    2 cloves garlic - minced
    2 tsp minced ginger
    2 tbsp mild curry powder- go hotter if you prefer
    1 tbsp ground coriander
    ½ tbsp ground cumin
    1 tsp paprika
    ½ tsp ground cinnamon
    1/2 tsp salt
    ½ tsp black pepper
    2 tbsp tomato puree/paste
    14 oz (400g) tin finely chopped tomatoes
    1 cup (240ml) chicken stock
    14 oz (400ml) tin full fat coconut milk
    1 tbsp cornflour mixed with 2 tbsp cold water to make a slurry - optional
    2 packed cups (60g) baby spinach
    To Serve:
    Boiled rice
    Fresh coriander
    Chilli flakes

    I am an Asian (Bangladeshi), I can tell this curry will taste good. Try with garam masala though next time Nikki instead of only cinnamon powder. Garam masala is a staple of any meat curry ( it's a blend of cinnamon, cardamom, cloves atleast and more, depending on of the cook .... from India, Pakistan or Bangladesh) . Thanks Nikki.       Yes totally agree with you. I make my own in little batches using just 1 piece of cinnamon 2 bay leaves 3 cloves 4 pepper corns and five green cardamom. Roast then grind perfect

      I added masala to mine with a few other spices like red pepper flakes and a little sriracha and it was really good. 😋💖

      We have that same spice in Somalia but it’s called Hawaash / Xawaash < includes all of those spices you named into one spice. I think we got it from the Indian trade 500 years ago

    I just made it AGAIN! came out even BETTER this time! Added fresh Corriander rather than powdered but everything else the same. I was cooking for two so I used a whole can of Coconut milk.
    I added a generous dollop of spicey Mango Chutney to my own portion + fresh Popadoms and it was HEAVEN!!

    If watch Indian chefs, they cook off the spices, onion and garlic/ginger paste in oil and ghee first to infuse the cooking fats as it adds better flavour to rest of the ingredients.

    I’m originally Bangladeshi and we never use chopped tomatoes for our curry’s. We just use spices such as bay leaves, cinnamon, cardamoms, cumin, cloves, peppercorns, chilli powder, turmeric, coriander, garam masala and some yogurt. Our curry’s are always spicy.
    This is however an easy - mild recipe and you can get it done quicker. It also looks good. Will love to try.

    I normally cook traditional Indian curries and I was a little sceptical about this one, but it turned out absolutely amazing! Great flavour and perfectly balanced! I cooked it a little longer and added Garam Masala instead of Cinnamon. It had the perfect consistency, too, didn't add any cornflour. Thank so much!

    Added garam masala instead of the cinnamon, and put some chopped spicy peppers in with the garlic and ginger. Very good taste overall though for my first time making chicken curry. Thank you for the recipe!

    I am indian nikki - one suggestion , for making any curry dish - simmer it when you put spices and tamatoe untill it releases oil - this means your masala paste/ gravy is cooked .. love all your dishes

      i didn't downvote, but i can see why some might have, the recipe might not be what most are looking for, since some of the ingredients are quite specific; i also like even simpler recipes, including for chicken curry.

    I make my curries from the Als Kitchen RUclips channel for the true BIR curry style, it requires quite a bit of prep for the base gravy etc however the results are worth it. As a quick weeknight alternative that isn’t too powerful and all the family can enjoy Nikki’s recipe looks absolutely spot on!

    I love that recipe. I have never made my own curry, always cheated with a tinned sauce but I am going to try that this weekend. Having to substitute the coconut milk with evaporated milk because my mum has a nut allergy and I don't like coconut. Wouldn't risk it for her though. Cannot wait to try this, thank you for sharing.

    Just made my 1st today, fab stuff, being vege, i substituted the chicken for 300g quorn chunks(Very like chicken as i recall) & 100g each of cooked chickpeas/black beans, also added half cup of cooked black quinoa, really fab, will be a regular for me, thanking you

    I did this yesterday - really tasty, and I have 2 in the freezer. I didn't fancy rice and I had no naan or anything else, so I cut a small bap into thin slices, and lightly fried them - they were amazing. Lovely recipe, thank you )))))))

    Oh my that was yummy, I loved it. I did make a few changes added peas, and as I didn't have coconut milk I just used regular milk and added a splash to it turned out really yummy! Thank you once again! Love your channel! God bless 🌸

    I tried your recipe, I added a little marsala in it and 2 different currys red and yellow with red pepper flakes. It was really good. I like it a little hotter so I added a little sriracha on mine and it was really fantastic. Thank you. 💖

    This being originally a recipe from India, thought I would add my two cents. If you marinate the chicken for couple of hours with yoghurt, it will be even better. Chicken will become very soft n juicy. Also you can check in the nearest asian spice store and see if you can get some whole spices. They have a distinct falvour that you won't get in powdered spices.

    cook the spices in oil first to make a paste. Leave for 48 hours in the fridge for best flavour.

    Chicken thigh goes better with this. Has more flavor because of the fat. Its also cheaper

    I make mine a lot different. I seal the chicken under the grill for five minutes. I make my own curry powder as it's much better. Coconut oil, tamarind sauce, onions, fresh chilli's, fresh ginger, garlic, green peppers, tomato puree, Garam Masala towards the end. I wouldn't use tomatoes, cornflour or spinach though.

      I also feel like people should stop adding food to a hot pan that has not been seasoned. I don't understand the adding chicken with no seasoning and then adding the seasoning after you've already started cooking. That doesn't allow the flavors to cook into the chicken very well. It only takes 5 minutes to split those seasonings, toss the chicken in it, cook it and then add the rest of the seasonings to the pan. Other than that I can say the rest of this was the quickest chicken curry recipe I found.

      Yes of course you can freeze it. Anything that you can buy from a super market which is frozen, means that you can freeze it at home.

      @@Kitchensanctuary You should have sauteed the spices until the cooking oil separates, otherwise the spices remain raw when mixed with coconut milk, chicken broth, and water..

    Tomatoe paste? I’ve never seen it cooked this way. Totally different style. This seemed like a Eurocentric version lol 😂 I’m sure it’s good but weird mixture
