I made this tonight and it was one of the tastiest curries I have ever made. The trick is in cooking the onions right down until you almost caramelise them - they really shrink and go a lovely golden brown. I used chicken thigh fillets and chicken stock instead of water. I will definitely be making this again.

I've made this dish a total of 5 times now, what I would suggest is that you cut out the bit where you add extra water if the chicken breast you are using isnt of a high quality, reason being the chicken will leak a lot of water out of it and if you add extra water you get more of a chicken curry soup ^^, Extremely tasty dish tho

I agree, I like my thick curries. Also water adds to cooking time. I actually cook this in 5 mins. Onion, garlic, ginger, and spices for 2 mins. Then thinly slice the chicken, cook that for 3 mins (if it's thin sliced it will cook fast). Then add the cream. Then you're done in no time

    I did it!
I think in the video they used actual cream. I used coconut cream and used *way* less than the whole can and I'm glad I did because it's a *lot* of fat.
Mine came out with almost too much flavor! Not because too much of any ingredients but because I cooked it down and reduced it a lot. It almost tasted like I used sun-dried tomatoes!
Next time, I'm going to add chilies and other hot stuff for a little more heat.
Thank you guys for the recipe!
EDIT: Guess what I did wrong - I only spooned out about a quarter of the can, not knowing that there was liquid underneath! I had no idea you had to mix it!
I saved the rest for another try.

I have made this recipe 3x in a week. One of them was made with chickpeas in place of chicken and no additional water. We. opted for thighs diced to suggested size, and it's SO amazingly flavorful and delicious! I've also played around with fresh tomatoes and canned; crushed, blended, cubed. All varieties worked when you cook the ingredients to the textures suggest. The riper the tomato, the richer the flavors. Timing will vary depending on pan and heat level, but pretty spot on as we did step by step each time to not miss a thing. My young daughter loves it and has requested this we add it to our rotation. I made this last night and it was over-the-moon delicious! The author said "This is not traditional chicken curry recipe" so I took that as my cue to go ahead an improvise and so I took advantage of the opportunity to clean out the fridge. I followed the base recipe exact (aromatics and spices) but only added three tomatoes (because that's all I had), added about a quarter of a fresh zucchini, half a container of mushrooms (they were getting close to retirement), a lonely sweet yellow pepper, and about four slices of jalapeno that was left over from pho. I have no idea how much the chicken weighed... I just used two boneless-skinless breasts.
I liked the music, but I'm "old school" so I printed the recipe from the link.

I made this the other day and it was so amazing, so flavorful, and beyond my expectations. Making this and serving it will make one look like a professional chef. When I made mine I tweaked it a little I didnt have coconut milk/cream so instead I used a tbsp of coconut oil and it still gave the dish a coconut hint. Also, I added crushed red peppers and seasoned to taste with all listed seasonings this curry is amazing once again as you can tweak it to your liking and it'll still come out delicious my boyfriend and I have been talking about it since Sunday truly one of my best dishes that I have made with of course help from youtube.

So I saw this video and I was craving some Indian food, but I didn't have any garam masala or curry. I went out to buy some, but since we don't have garam masala where I live, I had to mix it myself and I did. I just finished cooking this and it turned out amazing. I didn't have coconut milk so I just used whole milk 400ml and that took away from the taste a little, so I put half teaspoon more curry in it and it turned out amazing. Thanks for a simple and tasty dish

This looks good! I recently learned that the key to a good curry is to really cook down the onions until golden brown for chicken, dark brown for red meat. Plenty of ginger and garlic and the spice combination is up to you. add a bit of liquid at a time. Better to keep adding than putting too much in. Curry is a labour of love and can't be rushed.
