    I like cooking sweet potato in the pressure cooker, then dicing, freezing and making it into nice cream with some frozen wild blueberries, a little soy milk, cacao powder, vanilla extract and cinnamon. I top it with a little shredded coconut, pumpkin seeds and a little fruit like pomegranate or blueberries. I also do this with Japanese sweet potato and have done it with squash as well. I put the servings into little tea cups and I keep in the freezer. I have one for dessert after lunch and one after dinner. It is delicious and satisfying as a desert. Because sweet potato is naturally sweet, I do not add any sweetener like whole dates to the nice cream version. Today I made sweet potato pudding using Japanese sweet potato, soy milk, chia seeds, dates and cinnamon. I blended in the blender and placed it in small containers in the fridge. You can also pop it in the freezer and it will freeze for nice cream, but texture is slightly different than making nice cream from frozen sweet potatoes. I usually have to let the frozen sweet potato sit for about 15 min to let it soften a bit, as it can be a bit hard right out of the freezer. Plant based Gabriel has some good sweet potato nice cream recipes.

    I have been eating sweet potatoes all my life it so good I would steam, bake, grill, and also i eat it raw make it like papaya salad instead of papaya I use sweet potatoes very delicious. I also plant the sweet potatoes it young leafy greens are also good to eat.Thank you for the great advice.

    I wsh I liked eating sweet potatoes because I know they are much better for my health than white potatoes are. I gew up eating mashed potatoes with gravy. I now eat canned potatoes with milk gravy from time to time. Thanks for the information Healthy Immune Doc. You are an angel.

    One problem with purple sweet potatoes - finding them. I have NEVER seen them in stores in my area and if you want to order them online the price I saw was $29.95 a pound.

    Ive seen tests of potatoes which have been previously frozen and they still affect your blood sugar just like before they were frozen.
    There is such a thing as purple regular potatoes. Are they any good?

    1:04 Not all potatoes are white inside. Violeta are purple inside and are delicious. Highland burgundy are red inside. Yukon Gold are yellow inside.

      Was about to comment this. Also there are popular sweet potatoes that are white and yellow as well. Color alone would be a pretty unreliable identifier of potato type.

    I know potatoes have a lot of good stuff at the skins. But commercially grown has alot of pesticides and herbicides. I would suggest to peel them and then rinse well. 👍🤟✌️

    I recently discovered purple sweet potatoes & they are so good & sweet! Can we eat sweet potatoes raw? Can we eat white potatoes raw (I would peel them, of course, because of the "eyes")? Then they would contain more Vitamin C. Thank you.

      No, potatoes need to be cooked before consuming, don't eat potatoes with green on or under the skin, the green is poisonous, and if the potatoes are starting to form shoots, best not eaten, organic is best, but more expensive

      ​@@stephanielane1821White potatoes CAN be eaten raw. I used to do it when I was in my teens. Also barrels of potatoes are kept in locations in caves near where I live .Their purpose for that is to feed someone if they were to be temporarily lost.

    Boiling potatoes removes most of the potassium. Steaming or microwaving does not. You can retain the potassium by using the water from boiled potatoes to make soups and sauces.

    My body actually prefers sweet potatoes. I guage the difference in how my eyes respond at night and my blood sugar level all day. I really stick to only oats, brown rice, sweet potatoes and popcorn.

      Steaming is best way to enjoy the nutritional benefits of potatoes…esp sweet purple potatoes which are a standard diet amongst the oldest people in Japan

      There are purple skinned potatoes from the night shade family. With all the GMO, I wouldn't be surprised if there was a nightshade purple potato. In general morning glory family is pointy and long but when in doubt, ask the farmer!

      Do you mean whole plant foods? Many Plant based foods aren’t healthy…potato chips, French fries and coconut ice cream are plant based. Plant based is a marketing term used to sell processed foods.

    it's exactly what I thought. I tell people for decades now to eat sweet potatoes if they have health issues, and they never believe me. now I can send them here.... (BTW, it's the same with plantain bananas.... they are awesome for people with diabetes because they have a low GI. and like all bananas (yes there are a lot of varieties) they are full of nutrients especially potassium.)

    My grandmother lived to be the oldest woman in the US. Lessie Brown. Google her She ate sweet potatoes almost every day of her life. ORANGE, NOT PURPLE. The only serious sickness she ever had was Shingles.

    The poison in potatoes (Solanin) tastes bitter. So through them away if they are bitter. Sweet potatoes can be eaten raw. A wooden box is a good place to store potatoes.

    Wait a minute. If you boil then freeze potatoes to prevent the sugar from being digestible, isn't that going to be just like eating potato chips made with Olestra? I can remember people rushing to the bathroom in order to keep from soiling themselves after eating food made with olestra.

    Greetings Dr. Liu, once again I appreciate your wonderful, concise and informative videos. However, the sound effects take away from your wonderful format. I noticed this with another health video in a totally different area. These sounds (dings/strange wind type emissions) are invasive and smack of meta messages. If these are a feature of RUclips please consider to inform them if you too are in agreement with me. If it is a choice by you, my apology. These sounds actually prohibits my viewing--I rather just hear your wisdom and not a bunch of sound clutter. I plan to also inform RUclips also. Your message, for me, gets diminished/lost in all of the other sounds.

    I know sweet potato is a lot healthier to eat than white potato, however I rarely eat it but keep eating the white! Why? Because the taste! Sh!t it tastes sweet! It doesn't go very well with other foods in a meal. To me its taste is just best for dessert (but I'm the guy who doesn't care of dessert!)

    It was 2005 06, 07 The president of the Washington State Poatoe Board, took offense at the bad rap potatoes were getting. He went on a 90-day diet of potatoes. After ninety days he had lost 30 LBS 🙃 The problem I have with sweet potatoes, is the sweet.

      The faster you cook them, the less sweet. Raw, they have little sweetness, it's an enzymatic process that converts starch to sweet maltose as it warms up. If we take the video advice to avoid frying in oil (a very fast way to heat them up), try chopping them up or even grating them before adding to a small amount of boiling water. Cook with the lid on for a minute, then stir while the water evaporates and you end up basically with mashed sweet potato that's much less sweet. I've done this, but I prefer them slow baked because I like the sweetness a lot.

    The soluble fiber is food for the gut microbiome we cannot directly use the soluble fiber or resistant starches but we can can use the short chain fatty acids SCFA the microbes in our gut produce when they metabolize the fiber for energy. These fats are absorbed in the large intestines. It is the same reason gorillas can eat fruit only, the gut bacteria are making the proteins and fat they need from the fiber and resistant starches. They even have a non vestigial appendix as an extra fermentation chamber. also they will engage in coprophagy for a second go through the fermentation. yum! So no you are wrong in saying it takes more energy to digest the fiber. The fiber becomes fatty acids in the gut if we have the correct bacteria populations. It's the fatty acids SCFAs that provides us with extra energy and prevents blood glucose spikes because these carbs are metabolized to fat by our symbiotic friends. we should be counting a percentage of fiber as usable calories. Retrogradation is a good method to make more resistant starch to up the SCFAs from the microbiome.

      You are correct. Fiber is digested by our gut microbes which make short chained fatty acids like butyrate, which is the primary energy source for colonocytes.       Boiling loses some nutrients in the water. However microwave doesn't always distribute heat evenly to kill germs.

      @@Healthyimmunedoc Found your channel just this week & am playing catch up on all the great content...Not trying to one-up you Dr, but if someone needed another data point, it is interesting that Consumer Reports did a report this summer on dark chocolate and gave a list of the companies that produces chocolate and gave the levels of metal (some toxic) that were in chocolate...I was shocked. I am now only focused on cacao (no, I didn't spell it wrong) chocolate for health benefits. Look forward to many more videos from you.
