Other Asian country like Cambodia and Myanmar, they even add honey or something sweet to the natural sugarcane juice, which in fact just added more unwanted calories and made the juice less natural.
I remember trying the rice wine at a homestay in the Mekong. OMG. There was an incredible warmth as it went down and almost immediately I felt drunk. 😂
I used to go to Cafe Ciao in Hanoi for lunch ... it's just across the street from the large shopping mall, close to the small lake/pond near the old town. Great food, you should try it.
Just make sure to ask for a variety and eat it with sauces/dips if it comes with the meal otherwise it will be bland. This tour guide was too heavy on similar noodles; he should have shown them savory or sweet sticky rice dishes, rice dishes, or even more variety of noodles than he did. He definitely should have shown more grilled proteins that are wrapped in lettuce, herbs, and dipped.
I would highly recommend you should visit back to Pho Co Street in the weekend (after 8-9pm). At this time, those streets will be only for pedestrians and much more lively than usual, many activities will be held publicly . The facts that all of the best street food vendors I knew in Pho Co Street only open in the weekend after 10pm :-) There are one of the unique nightlife styles of HN-ish people.

You have to deep your Banh Cuon ( steamed spring roll ) in the sauce before eating it . That sauce makes all the difference on the taste of the roll

We like food tours as well at first, just to get familiar with a place, good way to do it.
