    蒸面包 蒸葡萄干手撕面包 比烤面包松软!好吃不上火!不用机器,不用使劲揉面,非常蓬松暄软,像棉花一样轻,松软又拉丝,吃一次就会上瘾喔,太好吃了!
    配方 Ingredients:
    高筋面粉280克 (2 杯)
    Bread flour or all purpose flour 280 g (2 cups)
    温牛奶150毫升
    Lukewarm milk 150 ml
    酵母3克(1 茶勺)
    Instant dry yeast 3 g (1 tsp)
    白糖25克(2 大勺)
    White sugar 25 g (2 tbsp)
    盐3克 (1/2 茶勺)
    Salt 3 g (1/2 tsp)
    无盐黄油20克 (1 大勺)
    Unsalted butter 20 g (1 tbsp)
    鸡蛋一个60克左右
    Whole egg 60 g +-
    植物油5毫升
    Vegetable oil 5 ml (1 tsp)
    葡萄干50克
    Raisin 50 g
    蔓越莓干30克
    Dried cranberries 30 g
    烤盘11×25×7厘米
    pan size 11×25×7 cm

    I tried aldy 3 days ago using the baking method. Considered very successful, well risen with soft texture
    I used sesame seeds to top up which looked very appetising indeed.

    感謝分享、試作了兩次大成功、又好吃、但是請教今天相同方法、發酵後覺得特別黏、會黏桿麵棍、作好生胚發酵ㄧ半因臨時有事出門、怕壞了放冰箱結果回來ㄧ看塌掉了、是什麼地方出錯了。

      這是發酵過度了,加上麵團很軟,所以內部組織支撐不住,就有點塌了

      可以,175度/350華氏度烤28分鐘左右至金黃即可~~

    Can I put the dough in the fridge overnight then steam the next morning? How long I need to thaw the dough before streaming? After thawing I need to put the dough in cool water or in boiling water with high heat? HPlease advise. Thanks .

      Yes you can put the dough in the fridge overnight, after thawing and the dough is double sized, then use cool water start steam with high heat.~❤❤❤

    Can I bake it instead? If yes, What temperature and how long to set?

      Yes you can. bake in the preheated oven at 175℃/350℉ for about 28 minutes until golden brown~~the fluffy soft taste/texture won't change if bake it

      牛油融化後就會粘手,繼續揉,讓它和麵粉麵團融合好,就不粘手了~~

      冷水落锅,大火烧开,继续蒸28分钟(根据锅的大小也会有一点不同),关火后等6-8分钟,开盖,就好了

      大火燒開後繼續蒸28分鐘至熟透,然後等8分鐘打開鍋蓋,這樣不回縮~

      我用大同電鍋蒸
      大約1.5杯米的水
      蒸的時候有留一瞇瞇縫隙
      跳停後過10分鐘才拿出來放涼

      自己做的面包没有添加任何的面包改良剂,自然放着都会风干变老发硬,所以,任何一种面包凉了以后,放入塑料保鲜袋里面室温或冰箱冷冻保存都可以~~室温下保存的可以直接吃,冷冻的就自然解冻后吃就可以会再低温烤一下,都好吃~~

      可以烤,配方不用改,表面刷上蛋液,預熱烤箱溫度180攝氏度烤28分鐘至金黃,烤18分鐘後表面變色可以蓋上錫紙繼續烤,以防上面顏色過重~

      when water boiling then continue steam for another 28 minutes over high heat. turn off the heat wait for 8 minutes open lid.

      180攝氏度烤25-28分鐘至金黃即可~

      I baked at 180 deg and it was done in 20 min in my Airfryer, mid level. Is it correct for bread? Or used bottom level? I don’t hve 175 deg reading.. only 170..180 etc.
      Pls advise, TQ.

    請問麵粉280g/2杯,是總共280g分成2杯,還是總共560g?

    我反复看也没有看到你在什么地方告诉了观众,面包需要蒸几分钟。其实,在7:14的地方就可以告诉我们了。但是,始终没有说。???
