So smart to do it with friends! Alone it took me 9 hours. We are so behind because of the weather the crops are just getting planted this past week. So no salsa for a while. My friend puts cilantro and corn in hers, it is so good...eats like a meal.
I have seen a lot of great recipes on you tube my question is if I make a batch of salsa to go straight into the refrigerator can I skip the pressure canning or water bath step? and if I do this how long will it last?
Good basic canned goodies that don’t limit you in what you can use it for! I do the same. Can add things later to tweak it for whatever flavor you like! Great video! Love you two!

I just made Salsa and have 3 quarts of strained juice I would love to keep and drink in the next 2 weeks, but want to know if there is any trick other than adding 1 teaspoon of salt and canning the quarts in the canner?
You could have saved time with the chopping. Get one of those little devices that chop, slice, and dice for under $20. It looks like a storage container with different little plates for chopping, slicing, and dicing. Makes the job much quicker.

They both have a different taste and We really enjoy having both types on the shelves. I’m out of both right now and I can’t wait to get more on the shelves, I wasn’t able to can last year due to an injury so I’m excited to get back into it! I live in Michigan and we are just getting gardens and fields planted so we are way behind you all. But it will happen!

We do not add cilantro because we use this salsa for many different things. Its just a base for other meals. We add other things as we use it in different meals.

Hi Danny I know you like to hear the weather patterns I am visiting family and friends in Rhode Island today is 72 degrees and there was a circle around the Sun orange on the inside yellow on the outside I have never seen that in my life and by now it should be above 72 degrees up here

I use a jar of salsa in my meatloaf (1 egg, 1 jar, breadcrumbs if you want) it is the best meatloaf ever. My kid s even beg me to make it for their birthday dinner. ( i usually do a mix of ground beef and ground pork if i have it on hand, but it isn't necessary )
Looks beautiful! I did mine like that last year (except I omitted the sugar) ... I put small jars of it in baskets with a few other things for Christmas presents for family and I kept the rest lol - Good Stuff!

I'm from what some call the hillbilly northwest and most of the folks live the same lifestyle, canning, large dairies, berries, etc. I see some of the art of food preservation lost, but I also see a new spark of desire to go back to the old ways. Thanks for the recipe. My Uncle Mike made an awesome Mango salsa when we visited them in San Diego back in 1996. Maybe I will lower the amount of sugar and replace it with mangoes so it will taste similar to what I had. Not sure what all he put into his. I don't know when I'll be able to visit them again. I'd rather visit my relatives in the Philippines like I did this past April because the food is more delicious there and except for the driving people are more polite there. I hope Lee and our son Daniel come with me next time though as I really missed them those ten days. Then maybe we can go to Ireland as that's part of Lee's ancestry.

My mom used to make juice for cabbage rolls . It was good . Used to cook the tomatoes and put them through a strainer and put the juice into heated glass pop bottles and capped them . They lasted for a few years if needed .

4 cloves, Danny wanted limited garlic flavor. You can add as much garlic as you like. It won't hurt the recipe, just more garlic flavor to the salsa.

The tomato juice is for adding to soups or to cook pasta in.

We use a rubber mat to can on and will bump the jars up and down this usually removes any air bubbles.

The amounts are optional we had extra pepper in one. Season to your taste.

It accents. In a way you're bringing out all the flavors... Not highlighting one, ie, garlic. That's what garlic bread is for :)
