Easy peasy ;) Also, to elevate it to a whole new level; substitute a tablespoon of goosefat for the oil, use half the amount of Tomato paste and about three handfuls of finely chopped sundried tomatoes and add a tablespoon of brown sugar with the salt too.

Worsh-cher-shire. You leave out the chester. Thats exactly how I make my sloppy joes minus the chipotle, and I use Yuenling Lager. America's oldest brewery. I put shredded cheddar on mine. I have to admit it makes me feel good when I see The Man cooks so much like I do. Thanks for helping me tweak my receipes. You're awesome.

The chipotle peppers were REALLY SPICY because i'm out here in CALIFORNIA, so I just added 1 TBSP of the peppers, and 1 TBSP of the sauce it came in (the can).. Gave it a real nice smoky flavor, added sugar and salt, came out perfect.

I made this for dinner tonight, it was a hit. I replaced the beer with beef stock and added about a tablespoon of honey. Oh and I used Hawaiian sweet bread buns. Thanks!

Question: How long do your onions keep on the counter? Do they last long there? If I put mine in the pantry closet, they go bad fairly quick, so I store them in the refrigerator.
Really? Onions should last at least a few weeks in the pantry. The fridge will dry them out so be careful. For chipotle peppers, check the "Latino" section.

I like the heat component from the chipotle peppers. Try adding a Tablespoon or two of sweet pickle relish. It gets the sweet / hot thing going on.

Diced onion
1 lb 80/20 ground beef
1 clove minced garlic
1 tbsp Worcestershire sauce
2 tbsp minced chipotle peppers
6 oz tomato paste
1 cup beer (dark ale)
Season to taste

If you caramelize the onions and peppers first for near an hour it releases a flavor that makes this taste even better.
