- ingredients
Black cake recipe
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp glove
1 stick/ 1/2 cup butter
1 cup brown sugar
3 large eggs use 4 if they're small
2 1/2 to 3 cups pureed fruits adjust fruits to your liking
1 tbsp lemon zest
1 tbsp vanilla
2 tsp almond extract
burn sugar or browning add as much or as little as you like.
if your batter is too dry add alittle wine.
pre-heat oven to 285°F bake for 1 1/2 to 2 hours every oven cooks different so keep checking for doneness.

2 cinnamon sticks
2 star anise
6 cloves
lemon peel
sweet wine
rum
add enough wine and rum to cover the fruits

Candy you need an award for this - the most simplest and easiest instructions ever, that cake looks so delicious. Always wanted how to make the burnt sugar but it is too complex but yours is so simple. Love of black cake but I used fruit juice, no alcohol and never had enough. Never thought you could used a hand blender to blend the fruit. I will try it. 🏆🏆 Masterchef Candy 🏆🏆

Listen thanks so much for your recipe I tried this and in a matter of two days my family killed the came. They were actually arguing over it. My confidence was so high after this I have to do it again. The only thing it was sweet so instead of putting sugar with browning. You can use the browning alone because the fruits are sweet as well.

This is such a thorough tutorial on “Christmas Fruit Cake”. In Trinidad there is a light red wine called “Cherry Brandy” which we add so the cake is not too Rummy. It’s only made there so it may not be available in the USA. Your fruit/wine/rum combination are A++ and it so moist with the perfect colour! I’ll give you 2 Tips one of which I got from an elderly lady in Grenada “add a little white/dark rum to eggs to cut the rawness” and if you want to save time try “SARSONS RICH AND DARK BROWNING” which is made in England and available in most of the islands. You will be pleased with the results each time. 🙏👩🍳for inviting us into your kitchen for this step by step 🎄 recipe which I’ll be trying in early December 🥰🌹

The browning by SARSONS I suggested is not like any other. You can make your cake as light colour or literally black and it comes out great each time. I have not burnt sugar since 1985 when I discovered this brand! I’ll send you a bottle from island via Canada. My favourite chef 🧑🍳💕

See i know quite a few people who don't like a dense pudding texture cake they like it in the middle cakey but still fruity and rich. This is the perfect texture.

The fruits can be soaked from now the longer u soak it the better but it can be used

Hi Ms Candy I have a problem with my wine soaked grapes. I had made it about 11-12 days ago and now that I check on it I see bits of white mold on top of it.
Is it safe to use if I scrape off the top that has the mold? Or should I dump the whole batch in the garbage?
It's just I ended up wasting grapes and wine and I don't want to lose it. But I don't want to use it if it has mold.
I had grind mine with a blender and it's more liquid than a thick paste. I had hoped to get more wine and raisins but I just hadn't had the chance to.

Yes 3 jumbo eggs are fine it won't alter the recipe atall.

Can you use molasses instead of the burnt sugar?
You can add alittle but I won't suggest using a whole lot. You can use browning sauce for color instead of the burn sugar
