We used sour cream, cream cheese, Swiss and Monterey Jack in the green ones to get sort of an enchilada Suiza vibe. It's a great change of pace when you start getting tired of reheating all the leftovers. The prep is surprisingly quick as well. It probably takes less time to prep and assembly than it does to heat them up in the oven/pellet smoker. I made these several times when I was in the Navy. For three straight years my crew was on midshift for both Thanksgiving and Christmas. Some of us would bring in a bunch of food so the crew could have a short feast between watches. I'd make multiple trays of turkey enchiladas for our on-site holiday meal.
A strong vote in favor of exactly this for leftover thanksgiving! I don't usually find the Goya Chili Verde, so I usually go with the Herdez brand. Excellent work!!
Just found your channel the last few days and definitely enjoy what you’re putting out. I love enchiladas so will have to try this. My question for you regarding the Searwood 600 XL, is this too big of a grill just for 2 people 90% of the time? I’m just curious of the cost factor as well regarding the pallets. Is there going to be a big difference between the standard and XL if I’m only grilling 2 steaks or enough chicken wings for 2 people most of the time? I’ve owned the Weber Genesis 300 for 10 years now and it’s still working great but I want a pallet grill and to do some smoking as well but again, really only 2 of us most of the time. So undecided between the searwood 600 and searwood 600XL
