- Crack chicken and crack burgers are having a major moment right now... so we decided to put our spin on the viral recipe with these crack chicken quesadillas! These cheesy chicken quesadillas have all of the ingredients that you LOVE about crack chicken including bacon, shredded cheddar, and ranch dressing mix. All stuffed inside a perfectly griddled tortilla and served with a simple jalapeno ranch dressing!
This griddle quesadilla recipe was fantastic, but the star of the show is the chicken marinade! We used bone-in chicken thighs for our quesadillas, but we show you how to remove the skin and de-bone the thighs to save some money. Then, we marinate the chicken thighs in pickled jalapeno juice and a few other ingredients. So GOOD! Enjoy!

The jalapeño juice is magic! I made a gluten-free macaroni salad for my celiac daughter, and it was really pretty boring. I was looking at a jar of jalapeños and thought… well, what could it hurt. Added about a tablespoon of juice to about a pint of salad, and suddenly I had the best macaroni salad of my life! And you’re right, not spicy at all. Gonna give this a try tonight!

I'm in a food coma. Just made these and they did not disappoint. I don't have a flat top so I grilled the chicken and made the quesadillas in a cast iron.
Jalapeno pickling juice is magic. I think I mentioned on here before about doing Tri-Tip seasoned with Carne Asada seasoning and a whole large can of jalapenos and the liquid. Cook Low and Slow.
So good. Absolute magic.

Absolutely...we did kinda do something similar...steak and cheese roll ups with corn tortillas...
Followed everything exactly except instead of layering it on as it cooked I mixed everything together in a bowl then spread it on! That was just easier for me though cause I’m blind and was easier to make sure everything was evenly coated. Personally don’t think it matters cause I now have to make them to feed a birthday party this weekend lol

Thanks for the great videos! I'd be very interested in hearing your experience with stainless steel vs rolled steel. I've heard you say you cooked on SS in the navy. There aren't many (or any that I can find) videos discussing the differences and I'd love to hear your take. It seems like SS would be more prone to sticking and harder to clean.

Update: Absolutely delicious! And even my most spice intolerant family member was ecstatic. She wonders what else I'll be making with that same "seasoning"... Hmmm. Planning to do a nice pork loin for Memorial Day this way, and probably some ranchero or smoked baked beans as the main side. And some good old fashioned garden lettuce (the ol Midwestern "wilted" version). Y'all Rock!
