We have the same exact type of dish in Thailand. Also called “roti” as well, and is eaten widely across Thailand as a dessert. The sweet snack of roti is prepared identically as you describe “Lao roti.” The preparation and origin of this dish is actually Southern Thailand, from Malaysian cuisine. My guess is it migrated north as Malays and Indians emigrated into Thailand from the Malaysian peninsula and via the Gulf of Thailand. The bread preparation is identical to the Malaysian roti canai (as well as the Indian paratha). In fact, in Southern Thailand (and among many Thais of Malay ethnicity), this roti is also served with curries… which is identical to the roti canai dish that I mentioned earlier.
