I actually made a Simic-Hybrid Bard! First time ever, playing a Bard in over 40 years of DnD. I went with a Sailor background so I could have the Breathe Water feature and took the tentacles feature at 5th level. He's fun to play.
I'm planning to play a Simic Hybrid when i get the new Dungeons of Drakkenheim book next year. The stats and mutations fit perfectly to that environment
I have a Druid Simic Hybrid, Shepperd druid. The character is a pirate who builds ships with a specialization in weapons. I have underwater adaption but I think I'm going to switch acid spit for carapace. We're in saltmarsh currently.
Simic Hybrid (base elf) Artificer (Artillerist) here. Lore aside, my character was an unwilling participant, got sold by his parents for reasons... and the artificer class is the result of trying to understand how this happened to him and whether it can be undone and if people could do this to him what can he do with magic, etc. He's got manta glide (already plenty of uses) and will be taking carapace when I get there since it's applicable when not wearing heavy armour which an artillerist is not proficient in and the strength requirement will never be met - so boosting that AC of course :-)
One of my favorite characters i play is a simic hybrid bladesinger because nothing in the subclass makes you use a weapon, and the grapple weapons count as attacks so i just flavored the grapple weapons as a cuthulu tenticle arm in place of my right arm. It also leaves my hands open for spell casting and I took the grappler feat.
I'm currently doing a simic hybrid in a ghost of saltmarsh campaign and the underwater adaptation has given me alot of opportunities for roll play and not worrying about drowning underwater. The build is a grappler fighter with a dip into rogue for expertise in strength, and I'm planning to go runic knight for my sub class. So far I'm loving this build.

Eventually I’m going to get expertise (through the skill expert feat), maxed out strength (through a belt of hill giant strength or a better belt), maxed out intelligence, maxed out constitution, the ability to add double my intelligence modifier to strength checks (by combining Armor of Magical Strength and Flash of Genius).
I have a homebrew simic hybrid that gets a evolution every 5th level. So 1, 5, 10, 15, and 20. Each level has a different list of features, except 10, where you pick a feature from the 1st or 5th level list. Some new ones are like: wings that give you a flying speed equal to have your walking speed. Or a angler fish bulb that let's you shed bright light

I now feel that the simic hybrid has the ideal mechanics to bring my creation to life. My next DM will have a lot of headaches as a result of Dr John Zoidberg.

He is a con artist that makes bets with people and will use his Hybrid Features to win easily (example, betting 5 Zinos hold his breath longer than his target in a lake, or 15 Zinos to jump off a 95 foot tall building without any injuries) It'd probably be more roleplay focused

Average mind stats(wis over int) and charisma mainly focused on his physique(maxed con). First feat taken was mobility for increased speed/hacking at people who can't attack back afterwards. Going for second adaption of carapace. I model his rage mutations after insects.
I play a Simic Rogue and it is a lot of fun to play with. His Backstory is (in short) that he was a designated assassin to eliminate cultist opposition to the Simic Guild but due to a raid in the labratory, his development was halted and his abilities and knowledge were not as sophisticated as they should be and his skills lack purpose. He was modified with mountain lion DNA (Nimble Climber + Lion Claws) and shares a lot of the weird behavior mountain lions have. So from a roleplaying perspective he is a four armed guy without moral compass, an illogical hatred against religious zealots (cultists, priests, paladins etc.) and a weird habit of disemboweling his victims, keeping their organs in a little pouch to eat from and marking his territory with feces. Due to the extra limbs, the fighting is quite practical and very versitile. He is usually ranged with a light crowssbow but has the ability to climb and jump on the enemy, grapple withe the claws and bite as a bonus action (yes we adapted it to fit the character). He is very hard to catch when attacked as he can climb onto trees, dodge away (scout as subclass) and so on. Also he can shoot his crossbow while climbing, because he has two spare hands which is quite useful. Very fun to play, highly recommend.
A good change to nimble climber is to change it out with spider climbing. Ravnica is a very vertical setting so you would think the Simic would go the extra mile when it comes to climbing.
Simic Hybrid Barb, Path of the Beast. I made him a shark-tapus. With underwater breathing and the appendages. You upgrade the appendages (when you get them at level five) at the start with rage damage and at level six with them counting as magical. Rage with the Beasts claw option and you will have three attacks and a bonus action grapple chance at level 5! Flavor the tail option as your tentacles (if your DM agrees, mine did) and you get a dope reaction move and they now have reach! Also at level six, you can climb! He's turning into a real Monster and I love it. Superfun!
Using just the functions of the racial stats, I built a character that was meant to be a Golgari Kraul, still very locked ro Ravnica but built upon the creation options!
Making a hybrid fathomless warlock, raised by aboleths as a spy. She thinks that her city of aboleths is the best thing ever and that the world will be far better off when all of it is underwater.
Any ofical stats for bear paws? I'm playing a character who fell in a vat of Potions and basically went a little bit mad resulting in him hunting down a bear ripping off its arms and sewing them to his own body to replace his "weak human arms" with "strong bear arms"

I wanted to go different with a wizard that want to study and develope his own so i chose Tundro from the herculoids, A Delnoric from spell jammers, a Aarakora and a mimic. Non aquatics. I even was thinking of a beholder kin . I want something different and unique , an accident or maybe a pet

I think what I would do is make a simic hybrid (base elf or if it's allowed base half vampire or base vampire) sorlock (aberrant mind sorcerer with 2 or 3 levels of great old one warlock) but rather than being an experiment of some kind they are literally the child of cthulhu there background would be they are a criminal there crime is they are part of a cult following cthulhu as for there mutations from being a simic hybrid they can breath underwater (this makes the most sense because why would a child of cthulhu be able to die from drowning) instead of tentacles they will have scales (yes tentacles would make more sense but a sorlock wouldn't have enough strength to justify it so they will have scales which for the story will actually be a layer of slime)
The glide confuses me. Does it use your walking speed to limit the amount you can move per turn? Otherwise you could move like 200ft at max hight. Also with climb speed. Can you use both your speeds by climbing along a wall jumping off and walking the rest of the way? I know you can benefit from both flying and walking speed but does that work the same way with climb speed?
We would rule that the pc can go 100 feet by gliding, if its on the ground at the end of the round we’d say it can go its move as well. Whats key here is how your party handles the timing of fall resolution. Does this seem over powered? Maybe, but its highly situational and makes the pc feel awesome.

In other settings, Simic hybruds can be pretty cool (roleplay wise) as warlocks who are getting progressively more altered by their patron through the game

Semic hybrid beast druid in 5e is sick. Take the tail for the Xtra 1d8 ac everytime someone tries to hit you

To incorporate Artificers into the Simic Combine, I plan to create a Simic Hybrid as an Alchemist Artificer.

There are no official stats on your character’s right to near arms, but we’d recommend you talk with the DM.

Another option would be making an Artificer that has Mechanical Enhancements instead of Animal.
Whats the point of choosing physical featera when you literally can only have to attributes not of your choice? Seems kinda dumb to me
