Hi if your going to roll it yes, if your making it flat you can leave it on. I'm making a new video and will be posted on Monday on making the flat pancetta with skin on it will be up Monday night.

Hi if you leave it longer it will get salty max should be 3 days the longer the saltier it will get. Hope this helps
