Africa is a continent and each country within it has different dishes they serve/eat. Most of the countries in Africa have multiple tribes that eat different things as well.

You will love the chilaquiles more if the tortillas were fried into chips! Also, you have to simmer the sauce before adding in the chips :)
YES!! Chilaquiles are usually made with chips and are so much better. You get the pops of crispy and soft. Yum!

Omg this looks so good, I’m actually glad you did the recipe without frying since I’m limiting my oil… I’ll try this soon I’m not doing too much processed foods but for that comfort food we crave once in awhile this would be great ..
Pro tip for the chilaquiles: fry up your tortilla strips first and add just egg! The crisp on the edges of the tortilla strips is a game changer

When i saw that you guys didnt fry the tortillas before adding the salsa in the chilaquiles. My mouth dropped. Always always fry the tortillas. Makes a world of difference.

The recipe they used was from a couple years ago... in my ✨oil free ✨ days. ... i have an newer version too, tortillas are crispy AF. . Either way, as someone who grew up eating them weekly, both good I promise 😅

I love getting to know other cultures and doing so through food is always the best :D I must say, before going vegan I thought I am not into Mexican food but apparently I love these flavours! Vegan TVP chilli has become my signature dish and it's my non-vegan fam's favourite :D

Life hack: Put your plastic wrap in the fridge or freezer. Keeping it cold prevents it from sticking to itself.

an interesting point is that mesoamerican, pre-columbian food was mostly vegan. The aztec confederation had a mostly vegan diet, consisting of corn and beans, and only having the occasional meat-- usually turkey, but very rarely. The Raramuri are athletes of the Sierra Madre mountain chain who run like 500 miles over 2 days, often. They live off of chia seeds, corn, beans mostly. The spanish are the ones who used more meat, but most indigenous people live nearly vegan.
I usually pan fry the tortillas first so they get kinda crispy! This is a great option for a less oily version! 👌🏽 im gonna try the salsa. I usually just put in a premade one 😅🙈

yesss! love crisping them up in a pan with some oil.. this is just a less oily version. Or baking the tortillas in oven is an option... but just more work!

I'm Mexican and the way I do my chilaquiles is that first I fry the tortillas, if you don't want to fry them do to oil, you should put your tortillas in the oven with smeared with oil, this help to give a texture and the flavor is different from what you did. I would not eat your chilachiles, the tortillas were no tosted or fryied .
just a quick note. im only a couple minutes in....and um, i usually find the chats about the sponsored bits in videos quite boring but im HAPPY to watch yours and even half listen too, AS LONG AS U KEEP THAT TINY LITTLE GORGEOUS BUBBA PUPPA CREATURE ON SCREEN!!

what I eat being poor in Chile:
breakfast: a fruit, oatmeal and almond milk
Lunch: Lentils and beet salad
dinner: salad of lettuce, walnuts, avocado and tomato. Half a cup of quinoa.

Alexa’s recipes are always good, so you can never go wrong! Those chilaquiles look delicioso 🤤 also my mum adds epazote instead of cilantro, and definitely add crispy Totopos or chips next time, but wow wow it looked yuuuuum

I’ve never had fresh tomatillos before. All these foods looked amazing. I hardly cook Mexican food because I think it’s hard to veganise lol but your dishes all looked so delicious.
