I'm more interested in breading mix and chicken marinade. Did they marinate the chicken? What ingredients did they use to marinate the chicken? What herbs and spices did they use to make the breading mix that gave the chicken a very delicious scent? Is it just plain oil or did they put something else to enhance the chicken's flavor?
sadly they would never say it bc its their signature breading mix that makes their chicken good so i think no fast food restaurants would share their breading mixture :c
and i think they just fry it normally like any other chicken except that it is from the chiller (for the breading to stick evenly) and they use a pressure fryer
As a former jollibee crew, the breading mix packaging has no labels on it except for the expiry date same as the gravy. And we use vegetable oil for the chicken and palm oil for tje fries.
The flour Jolliebee uses is not the same as your store ap flour.. Look at the man's hands preparing the chicken in the flour. It's more fine and powdery. There is a bao bun flour in Asian markets that resembles the same flour..it has less protien and is very white and powdery. That's what makes the crust thin and crispy. I already tried it and I can say if you like a thin pretty crispy coating try it. Less filling too!
I believe it's a combination of ap flour, tempura, and cornstarch. I also think that there could be that "special" ingredient that can only be found in one of those specialty shops. As far as the wet brine, of course, it's salt and a little sumtin, sumtin ;-).... I've been trying to figure out the steps and ingredients on how Jollibee makes their chicken. I had it at one point but trying to recreate that very juicy and tender morsel was difficult. Not to mention, it was ruining my girlish figure so I had to put it on hold just to lose the weight I gained testing out the dish.

As far as the pressure cooking is concerned, not one of us owns a henny penny. Lowered the heat, covered with a lid, and let that "braise" in the oil for about 10. Maybe that's how she got it juicy? I just might open a discord acct just to figure out this recipe. Can you tell us if what exact temperature you are setting for your oil before frying? Thanks in advance!!! Im seeing 252 on the machine but Im not sure if that is the temperature but I believe this is in Farenheit if that 252 Im seeing is the exact temperature.
The time countdown on the right is what you are seeing. It's not showing the temp. From videos and knowledge I have, pressure frying is cooked at a lower temp than reg frying. I would think frying at 252° will not be hot enough. I would pressure fry at 325° for 9 minutes and release pressure and start 3 minute countdown while taking the lid off for a total of 12 minutes.
I found out that Jolliebee pressure frys their chicken at 347° for a total of 12 min. Pressure frying is different than open frying and takes less time. These measurements will not work for reg frying.

Cooked Temp : 170°F+
Serving Temp : 140°F+
