It apparently gives it stability, which makes it easier to use for icing cakes. It's something to do with the science behind the butter and sugar mixing first, instead of going cream cheese first. I'm not a Scientist (which means I didn't come up with this explanation) but I found all this out about a month or two ago, from a food science baking and frosting content creator. So you're not actually doing it "backwards"... you're using Science!! 😂🤭😂

Make your own caster sugar by putting your white sugar in a blender.. to make icing sugar keep on blending till powdery.
