I use to live in Louisiana I have to make it myself I live in VA now and nobody can make it the way I like... I like the Cajun creole seafood gumbo!! But his look good but we don’t use celery but it looks great! I would definitely eat it!😋

Louisiana cooking in it's entirety is not one of my custom specialties. However, I do make some Louisiana favored dishes. Thank you for your professional extra ordinary cooking skills. AB...thank you for posting this amazing recipe. As an Indian, I had to make sure I didn’t turn this into just another curry 😄. Followed your instructions exactly, however it took almost 2 hours for me to get my roux to a darker colour...my fault, I was too nervous to do it on a slightly higher heat. It got darker, and then I lost my nerve to keep at it and get it to a dark chocolate ( all the time, in my head I could hear you say “ you gotta trust the process” 😂). I couldn’t get my hands on Andouille sausage, so I subbed with Polish Brats instead. Let me just say, this came out fantastic ! My family polished it all off. Definitely making this again.
Followed this step by step today and so far it's amazing. Decided to do sausage, shrimp, and chicken and it's still killa. I know it's gonna be even better later when all the flavors have marinated🤤
Dude, I'm from deep south Louisiana and never in my life have I heard of putting the W in gumbo, nor do we put celery. We definitely do not put the king crabs either. We do put crabs, but the crabs we catch....the blue and orange crabs. And for it to be a true gumbo you gotta put more seasoning than that. Where is the cayenne pepper? I know they got it in the cajun seasoning, but you gotta add extra cayenne. Never in my all my cooking of gumbo''s, have I ever not cooked my gumbo for that short period of a time. You have to cook it to get all those flavors mixed. I married a yankee, and when we visit his people and I'm like, babe I gotta start cooking supper. His mama will look and say, well it's only 10AM, and my husband is quick to say....yes, but them Cajuns cook their food, they don't just warm their food, like everybody else does. Funny story, I was asked by a yankee to cook a gumbo for him and his family. I happily did. His daughter wanted to argue with me and tell me what I had just spent all day cooking wasn't a gumbo. I laughed and asked her what she knew about cooking one? Her response, well I cooked one for my dad. I was then told by this girl she got her recipe off of Pintrest and mine looked nothing like hers, so there was no way mine was a gumbo. Her daddy is the one that asked me to cook one for them. He used to be an over-the-road truck driver and was in south Louisiana many times. Needless to say, he ate mine until he hurt himself eating. Looked at his daughter and said, THIS is gumbo and that's why I didn't eat your "gumbo." I did enjoy your video. I like the way you talk very calmly. Sorry if I offended you, but it's how most Cajuns are when we see our food not being cooked right.

Best gumbo is in the Acadian area of Louisiana, the W sauce would make us cringe but other than that he got it down also blue crabs all day

You have taught me so very much. I am a very good, " Old School, " cook. However, you never ever stop learning. There are certain dishes that I am accustomed to in my geographical area in East Texas. Louisiana cooking in it's entirety is not one of my custom specialties. However, I do make some Louisiana favored dishes. Thank you for your professional extra ordinary cooking skills. AB...thank you for posting this amazing recipe. As an Indian, I had to make sure I didn’t turn this into just another curry 😄. Followed your instructions exactly, however it took almost 2 hours for me to get my roux to a darker colour...my fault, I was too nervous to do it on a slightly higher heat. It got darker, and then I lost my nerve to keep at it and get it to a dark chocolate ( all the time, in my head I could hear you say “ you gotta trust the process” 😂). I couldn’t get my hands on Andouille sausage, so I subbed with Polish Brats instead. Let me just say, this came out fantastic ! My family polished it all off. Definitely making this again.

Dude, I'm from deep south Louisiana and never in my life have I heard of putting the W in gumbo, nor do we put celery. We definitely do not put the king crabs either. We do put crabs, but the crabs we catch....the blue and orange crabs.
And for it to be a true gumbo you gotta put more seasoning than that. Where is the cayenne pepper? I know they got it in the cajun seasoning, but you gotta add extra cayenne.
Never in my all my cooking of gumbo''s, have I ever not cooked my gumbo for that short period of a time. You have to cook it to get all those flavors mixed.
I married a yankee, and when we visit his people and I'm like, babe I gotta start cooking supper. His mama will look and say, well it's only 10AM, and my husband is quick to say....yes, but them Cajuns cook their food, they don't just warm their food, like everybody else does.
Funny story, I was asked by a yankee to cook a gumbo for him and his family. I happily did. His daughter wanted to argue with me and tell me what I had just spent all day cooking wasn't a gumbo. I laughed and asked her what she knew about cooking one? Her response, well I cooked one for my dad. I was then told by this girl she got her recipe off of Pintrest and mine looked nothing like hers, so there was no way mine was a gumbo. Her daddy is the one that asked me to cook one for them. He used to be an over-the-road truck driver and was in south Louisiana many times. Needless to say, he ate mine until he hurt himself eating. Looked at his daughter and said, THIS is gumbo and that's why I didn't eat your "gumbo."
