Many people here in south Louisiana have Acadian ancestry, from back when Nova Scotia and New Brunswick were called L’ Acadie and was settled in the 1600’s by French people. Acadians in Louisiana were called Cajuns and arrived here in 1765, 10 years after Le Grand Dérangement, the Acadian expulsion. I myself am part Acadian. That’s great you will try to make our Louisiana dish gumbo. I’m curious however, you said you were black and your people have been there since the 1700’s. I didn’t know there were blacks in Acadie. Can you explain it please? Thanks.

This is the way gumbo should be made.. I was fortunate to befriend a family down in New Orleans back in the 90s that cooked gumbo this way, expensive but they can get really good seafood down there..

I've been cooking gumbo for over 40 years AND YOU KNOW YOUR STUFF!!! I don't add seafood to flavor the broth/roux, instead I add oysters and their juices. Also I think beer is a better taste than the wine. Magnificent CHEF!

What a fantastic video!! My momma's family was from Louisiana and we used to go there from Corpus Christi, TX twice a year. My aunt made seafood gumbo and also duck gumbo. The secret absolutely is in the roux. My momma learned to make it and so did I. I love both. I usually make it with shrimp and andouille sausage but also like other seafood added. I really enjoyed your video.

I make several kinds of gumbo. The traditional seafood gumbo I make is a green gumbo, no roux. It has seafood only, no sausage, thickened only with gumbo file. It is delicious and so are the other gumbos that I make. All wonderful, thanks for your recipe.

Years ago back in the nineties I remember watching Justin Wilson and we would laugh because he would always pick his nose like he was trying to get a booger out of his nose while he was cooking. He dishes looked great but I don’t think I could have eaten anything that he cooked. May the poor man rest in piece.

This is my husband's go-to recipe every time he makes gumbo! He is from New Orleans, now living in North Carolina. He follows this recipe to the letter. His gumbo comes out perfect every time! He has the Gumbo, and I have the B B Que, Hush Puppies, and Cole Slaw. Lordy, Lordy!
I grew up with Justin Wilson's step son and he lived just outside my hometown of Denham Springs, La. He named his home there, "Wilsonville, U. S. if A." He was a great storyteller and loved the , "Cajun" culture and it's many culinary delights. I think I would not be exaggerating when I say I honestly believe you have made a better gumbo than he did. I myself have "made" a many a gumbo (anyone can cook but good gumbos are made). I know from 1st hand experience because I've eaten Justin's gumbo at his house and watched him make them and without an actual taste test I still think by watching that this would be way up there on the "aweful-good" scale, like "slap yo mamma" good. It just made me feel like "sumpin's missing"! Now I gotta go, it's time to start making me some gumbo! Thanks for sharing and anyone following your pattern here won't be ashamed because it will be good.

I watched Justin Wilson as a teenager sooooo long ago. Fell in love with Cajun/Creole food at that time & the history & culture of New Orleans.
Years ago back in the nineties I remember watching Justin Wilson and we would laugh because he would always pick his nose like he was trying to get a booger out of his nose while he was cooking. He dishes looked great but I don’t think I could have eaten anything that he cooked. May the poor man rest in piece.

I spent a week in New Orleans as a teenager and I am 50 now and I have been trying to find a gumbo like the one I had there for years. I think I finally found one your videos are so informative and it looks great.

I grew up with Justin Wilson's step son and he lived just outside my hometown of Denham Springs, La. He named his home there, "Wilsonville, U. S. if A." He was a great storyteller and loved the , "Cajun" culture and it's many culinary delights. I think I would not be exaggerating when I say I honestly believe you have made a better gumbo than he did. I myself have "made" a many a gumbo (anyone can cook but good gumbos are made). I know from 1st hand experience because I've eaten Justin's gumbo at his house and watched him make them and without an actual taste test I still think by watching that this would be way up there on the "aweful-good" scale, like "slap yo mamma" good. It just made me feel like "sumpin's missing"! Now I gotta go, it's time to start making me some gumbo! Thanks for sharing and anyone following your pattern here won't be ashamed because it will be good.

I'm living in Mississippi now and people always ask me can I make gumbo and yes I can..butto gather the ingredients would be a nightmare and then the prep and cooking time we are talking 2 days...so I can only dream and watch other people's gumbo stories until I go back home to New Orleans
