Yes! I was surprised at first. The moisture content of kabocha sold in Japan varies considerably from one to another. Sometimes there are kabocha with too much water. In that case, I add a little mashed potato. It worked well 😊

Beautiful bento boxes, Sayaka! I would be happy to go to the office with one of these with me. I like that you use olive oil and also butter, they enhance flavour a lot, but ofc sometimes sesame oil is preferred. All are very nice, hard to pick a favourite, but I think the kabocha croquettes would be my choice, (with the umeboshi changed for some pickles :-) Looking forward to more sweet potato. Your mother´s look different from what I find here in Europe, but maybe taste is quite similar. Ketchup is not a fav of mine, rarely use or eat it. It is also quite sweet, combined with sugar and mirin there is a lot of sugar there. I try to use stevia as much as possible, but not a fan of anything too sweet at all. I have cooked okinawan dishes without any sugar at all, they turned out excellent in my taste, (with bitter gourd). Arigato! Keep the clips coming.

@@JapaneseCookingChannel Lucky you who have your mother´s sweet potatoes! Most of the time I roast slices in the oven as a side dish or make french fries to dip in mojo verde or aioli. Or make mash, maybe mixed with ordinary potatoes and/or rutabaga, it goes well with pork, especially salted pork, fried or boiled plus a onion or horseradish sauce. Also it goes in some milder Indian curries and Okinawan goya champuru, nice contrast with the bitter gourd. Sweet potato is very healthy.
Because. I am retired, I don't need bento boxes, but I love learning about these techniques so I can prepare meals in advance!

the kabocha croquettes look delicious! i found out that kabocha has a lot of water in it when i defrosted some little bundles i had frozen :D

Asian sweet potatoes look different than the sweet potatoes I know, I wonder at the difference in taste.
Japanese sweet potatoes have less water content and taste sweeter!
