The first dish is so interesting! Here in the southern US, we make an "egg salad" that is essentially your tartar sauce, but without the sugar and ketchup. If you add canned tuna, it becomes tuna salad. (We usually use it to make sandwiches.) I never would have thought to put it on sweet/sour chicken! I will have to try it. :)
These are easy recipes to make, with most ingredients on hand or easy to acquire. I’m growing shiso, mizuna, and dwarf mustard plants in my garden this year, so I’m hoping they’ll do well. I started some burdock as well, but it didn’t like the temperature or amount of rain we’ve had this spring.

I recommend trying the Chicken Nanban rice bowl. It is so delicious. I don't really like raw onions so I subbed chopped gerkins and minced cucumber and it was heavenly
All those dishes are scrumptious. I was most interested in the tofu edamame patties. We're Catholic Christians and we don't eat meat on Fridays. A lot of times I run out of ideas on Friday suppers. The tofu pattie looks awesome. Did you use silken tofu in it?
That is so interesting and weird how the yam goes from something resembling a potato to something that could almost be mistaken for biscuit dough. I had no idea yams did that.
