Hi Kunihiro I hope that you are all well and thriving. In answering your question, in SA we have multiple Asian food outlets and grocery stores. So most fresh and dried ingredients are available however I personally have not seen many specialized Japanese food products. Perhaps i need to keep a good lookout for them and use eagle eye vision 🦅 I however love your videos because I learn and broaden my mind especially when you showed us how to break the prawn/shrimp muscles. I was totally blown away. I'd never seen anything like it. Also the fact that you are articulate while simplifying your passion makes your videos all the more viewer friendly. I once had a japanese exchange student come and stay with me and she taught me how to make this recipe, I always wondered if she taught me correctly. I believe that I put a little sugar in mine. I like the idea of soaking the chicken in Sake. We did not do this step. But the rest of it was right on! Thank you so much for teaching me to debone a thigh.!! I always have trouble doing that. Now I know how.
I love this dish. It is one of my very favorite dishes.

Adding sugar to broth is a personal preference. And soaking chicken in sake is my original. So, I think she taught you the recipe correctly. But please try my version, too. It's delicious. 😋

I will master this dish - next time! My chicken had no skin and I ended up with too many liquid-ish ingredients for my little oyakodon-pan with its little wooden handle sticking up. Definitely had too much salt in mine, either the dashi or the soy sauce were more than needed. BUT, hey, the meat WAS incredibly tender!!! So, thank you, Kunihiro! This was a very good instruction! I think I'll get good results just using 1/3 of all the amounts with my little pan instead of 1/2. Next time!

I really enjoyed your version of this recipe, especially 1) the step where you sear the chicken before adding to the broth and 2) how you create multiple layers of doneness in the egg
Would be great to see a video on turning your katsu into katsudon. And a video on poke bowls, but I know that may not be traditionally Japanese

My family liked it so , with CHICKEN, they will love ❤️ it . Thank Y😋U , for the AWSOM recipes. I will let you know next weeks OYAKODON,w/ chicken😊.
