How to make delicious chicken teriyaki. step by step guide.

  • I always cook 80% of the chicken thigh while its skin side down and cook the remaining 20% while meat side down. And stay on medium-low to low heat all the way. That way, your chicken thigh stays moist after cooking.

    Ingredients of teriyaki sauce
    2 tbsp of soy sauce
    2 tbsp of sake
    2 tbsp of mirin
    1 tbsp of sugar
    This 2 to 2 to 2 to 1 ratio is considered the golden ratio for teriyaki sauce by many chefs. If you want to add some flavors to it, that's fine. But please don't add more than a teaspoon. Because we don't want to overpower our teriyaki sauce.

      My goodness, what if you're gonna prepare chicken teriyaki for 200 pax, how long will it takes b4 u can finish it. I would suggest choose chicken breast and not the chicken thigh, so that it would be very easy to prepare, my goodness nman. Your choice for chicken part in making teriyaki is not advisable. Just saying.

    I grew up in America with a bottle of Kikkoman "Teriyaki" sauce in the house, and it's still a comfort flavor for me. When I grew up and bought my first real Japanese cookbook, I was shocked to find out the "teriyaki" I'd been eating growing up was not the real thing. Now, I make my own tare from scratch the traditional way, but I still do buy the Kikkoman Teriyaki Sauce for nostalgia, and use that for other dishes. And I also like to use the Kikkoman Takumi Collection sauces, sometimes, when I am feeling lazy. The traditional way is still the best.

      I grew up with authentic simple chicken teriyaki in Japan. So I was very surprised by American teriyaki sauce when I first came to the US. It contains a lot of garlic. It was new to me. I got used to it, though.

    I make chicken teriyaki in bulk! I use whole leg and thigh quarters and debone them too so I can a bunch of chicken teriyaki to eat for a week, because I love it! Thank you for this recipe.😃😃

    Cooked it twice exactly how it’s explained! It’s easy & nice! I don’t have white sugar at home. So I top more of brown sugar. Taste fantastic still. Not like the usual store bought teriyaki sauce which is already sweet. Do give this recipe a try and looking to try other recipes from here.

    You are a true Master at teaching with such ease, it is so easy to learn from you. Which type of Soy sauce (regular Soy sauce or low sodium), Mirin sauce and Sake do you recommend, since you do not mention it on your video.

      I use Kikkoman soy sauce always. Chinese and Korean soy sauces taste slightly different from Japanese one. So I always recommend people to use Japanese soy sauce. Japanese soy sauce tastes best when cooking Japanese dishes.
      And I used Yaegaki mirin for this video. I simply buy the cheapest one I find that day. But please don't buy ones say " Mirin style condiment". Those products taste a little different from real Mirin. Real mirin is simply labeled " Mirin" or " Hon Mirin".
      And also for Sake, you can use the cheapest one. There are two types of sake, though. One for cooking and the other one for drinking purpose. In my tutorial videos, I always use sake for drinking because cooking Sake contains salt in it. Both of them are fine. But, I prefer adding salt myself. Plus, I can drink some of it while cooking. 🤣 By the way, I use Shouchiku bai, Ozeki or Yaegaki. Whatever the cheapest.
