I’m Mexican and always make these for my Colombian fiancé without even knowing this is a common Colombian breakfast. If you add jalapeño they become “Huevos a la Mexicana”. I skip them because he has to be in the mood for spicy lol. Lots of similarities 🥰

Its very simple, like with any flatbreads. You just pour water over corn flour and knead it untill you get firm dough. You can leave it for 1 hour or just cook immediately. On a hot pan, pour just a bit of oil (I strongly recommend ghee or corn oil), fry on both sides until light brown. That's it. :)

It's the most tradicional breakfast of Colombia. Arepa with perico and Coffee with milk or chocolate. Yummy!
