  • Chef Anita Shepherd from Anita’s Yogurt is in the MUNCHIES test kitchen making aborrajados, a Colombian street food snack that can be made vegan! Anita’s plant-based version of her beloved aborrajados consist of ripe plantains, pumpkin puree, vegan mozzarella cheese, and a secret fizzy ingredient (ok, it’s beer).     That aside, I always find these specific cultural foods so fascinating. I myself grew up in Brooklyn, and the entirety of my family are from the Carribbean, so these types of cuisines were ubiquitous. I'm a plantain lover myself. Make it every week whether by roasting or frying it with salt and honey.
    One of my brothers is partially Hispanic so he likes this version of plantain making and so does his son, who is partially Ecuadorian. The Hispanics do all sorts of things with plantains that I find fascinating. Even down to her specific cheese here is amazing. My goodness.

    Fried-smashed-fried plantains are very common around Latin America. Here in Brazil, it’s more common to get them green, and slice them on the mandolin directly into hot oil until GBD. Also, we don’t have a different word for plantains, we just call them “bananas da terra”.

      @@adrianxworld613 it’s not really a different plant, but a different variety. BUT: culinarily, they’re completely different. Plantains have a much higher starch content, while bananas have a higher sugar-to-starch ratio. If you pan fry a banana, it’ll caramelise and blacken, but plantains will get crispy and almost potato-like. Green plantains are great for deep frying, ripe ones are great for pan frying slices, and baking whole. You do not want to eat a raw plantain.
      tl;dr treat bananas like fruit, treat plantains like starchy vegetables (potato, pumpkin, etc)

      I love when Colombian recipes are centering your requirements. This isn’t authentic she says it isn’t it’s a combination of her and a Cali recipe from her mother. So maybe don’t claim ur making authentic Colombian when you found a Colombian recipe from fucking vice when the chef shares its her take on an authentic recipe. Colombia isn’t an American Whole Foods

      @@louisachalarca6494 I see where you are coming from but these rigid requirements to adhere to the dictionary definition do make it difficult for those who have certain dietary needs or who are trying to adopt a diet that is potentially more sustainable and caring of animals. Perhaps we could use the term "traditional" (as it applies to that region) rather than authentic, because authenticity has its own nuances and implications.
      Are there vegan options that would be normal to use in Columbia using local ingredients? What would you change to preserve some of that authenticity yet still make it vegan?

      Hi! The sauce was inspired by guasacaca I tried on empanadas while traveling in Venezuela. TBH it is not authentically Venezuelan or Colombian! But it goes perfectly with this snack. Also find it interesting that "aji" has infinite varities. For example where my Mom comes from in Cali it is not at all like this creamy sauce, but more like a pico de gallo that is very vinegary with lots of cilantro.

    My goodness, she needs a way riper plantain! She should have grabbed an almost black plantain. And no, it's not a breakfast item, it's totally a street snack. We would never eat it with sauce because it's so sweet. She should have just made it as authentic and simple so that it counted. You tried.

      I actually meant to add a note NOT to use riper plantains because they absorb more oil, will not hold their shape well, and can be cloyingly sweet. PS- thanks for making fun of how I talk, as someone biracial wish I could say it's the first time.

      It is not banana it is ripe plantains. As a Colombian from Cali (the place this dish is from) I can assure you although this dish has a sweet taste it is not the kind of flavor you are probably thinking of.
