    Good job instead of one thing - you didn't sharpen it. It's clear to see on your trial with meat. To make it sharp and usable you have to polish grill and knife on flat surface so tight, that you'll feel molecular forces. Then it will slice all the stuff into mesh, not squeese it.

    • @gear_show
      @gear_show  5 лет назад +13

      Oh, thank you for your feedback, I will sharp it and try it again.

      After sharpening he needs to put a washer, perhaps plastic, between the knife and the feeder axle and a rubber washer on the outer rim between the plate and the ring that holds it in place. This way he will easily have the desired friction for grinding and not mushing the meat. Great video.

      Also(the disc with all holes) I could see in the video that all those holes lost their sharp edge as well. A fine grit belt sander will solve that.

    Its antique chinesium from the "Rus Ting" dynasty!
    A file and some 320 grit sandpaper will sharpen the cutters.
    Plus freeze the meat until it just starts to get ridged (about 10-15 minutes for the small slices) it will grind 100% better.

    • @PrometheusZandski
      @PrometheusZandski 5 лет назад +112

      You can also see at 10:46 that the chopper blade is not sharpened. The blade and the plate need to be perfectly flat against each other to properly grind. That's why the grind coming out of this one looked like wet worms. He is mashing this meat, not grinding it.
      The restoration was beautiful. Just two last steps (plate and blade sharpening) and this would be a really good machine.

I do not know what is called the method you use to remove the oxide, it seems an electrolytic method, you can also use vinegar plus concentrated lemon juice or vinegar plus baking soda alone you have to leave the pieces and the results submerged for three days They are excellent. I work with meat grinders every day at work. The plate and blade need to be thrown away. They can only be used so much before they need machined. That's what is causing the plate to clog up and is what is causing the thin spaghetti effect.

    • @Clearanceman2
      @Clearanceman2 5 лет назад

      On stainless plates and blades, when do you give up, mine is shiny from grinding. It looks like it's squared the plate. But I guess eventually the plate will get too thin?

    • @ssmatthews6798
      @ssmatthews6798 5 лет назад +7

      For private use, a set of plate and blade should last a lifetime if you clean it and dont use them often. If you use them often, the best way to see if you need to replace them/send them to the grinder, is when the grinded meat isnt cleanly cut. Both the plate and the blade can get to thin :-) Also to preserve the set, tighten lightly until the meat is just before the set. Then tighten hard. Regards the butcher :-)

    • @Clearanceman2
      @Clearanceman2 5 лет назад +1

      @@ssmatthews6798 Thanks! No, I only use them about 5-7 times per year to grind deer meat into burger. I double grind, so double that usage. I just wondered, you can see where the plate is shiny on both sides now, I guess it's nice and square. Blade looks almost new. It's a LEM 3/4 HP commercial grinder. #12. Plate and blade are stainless steel.

    • @pakgcham2087
      @pakgcham2087 5 лет назад

      @@Clearanceman2 it should be no space between the (good) blade and the (good) plate. Shiny is a sign of friction, worn out. A space of a thickness of a sheet of paper will mess up the grinding.

    There would have been a flat-bottomed fitted wooden pusher fitted to just go into the upper input hole and allow you to hand-push the meat/bread/whatever down into the rotating screw, designed so that its bottom end could not itself touch that screw. You do not want to put your fingers inside there when it is working. You also need to put some bread into the machine at the end to force the last of whatever you are grinding through the front, which would only waste that small end piece of whatever you are grinding mixed with that bread pusher material. My grandmother had such a grinder, but it was larger with a much longer handle to grind tough meat, which she let me turn as a child when helping her cook. Great fun!

    The blades could have used a bit of sharpening, it would have make your ground ham (I think its ham) come out more easily. Also, NEVER use your hand to push down on meat in the grinder, as your fingers can very well get crushed in there. Maybe not to the point that you'd lose a finger, as it is a small manual grinder, but a bigger one could. An old butcher colleague of mine lost some fingers to an industrial one that way.

    Автор любит работать руками, но с головой пока не очень дружит. Физика, споротивление материалов? не не слышал =)
    1 - 5:45 - струбцина у мясорубки сваривалась. Так что нужной прочности у этого узла уже не будет. Восстанавливать такую мясорубку имеет смысл только для декоративного использования. Если задача состояла в этом, а функционал не важен. Тогда автор справился с задачей. (хотя за три миллиона просмотров на ютюбе оно того по любому стоило =)) )
    2. - Раз уж взялся делать новый прижимной ворот, мог бы сделать ему рычажную рукоятку (как у тисков). А то за петельку закручивать ручками неудобно. Или у хозяйки всегда наготове гаечный ключ, чтобы затянуть? =) (ах да, при попытке затянуть лопнет сварка =)
    3. - В классической мясорубке крепежный винт который держит рукоятку на шнеке, должен быть барашком. Тоже мог бы подобрать или сделать. (хотя если у хозяйки гаечный ключ под рукой то может там же где-то рядом и отвертка? =))
    4. - Края сетки должны быть идеально острыми. Он своей зачисткой их скруглил, да и нож тоже. В итоге мясорубка превратилась в "мясодавку"
    В итоге получился чисто декоративный предмет. Но внимание публики бесцено =)) Люди могут часами смотреть как другие работают и давать советы.
    Первая мясорубка комом =) Но вторая должна получиться у автора идеальной =)
