Why do you hold fresh roasted coffee for 3 weeks when most say 3 days and that the coffee begins to stale after about 4 weeks?

It depends on how the coffee roasted and which process it is.
From my experience, coffee gives the best taste after 3 weeks to a month. But you don't expect creamy extraction as it will be fully degased.
