I just made these! I added just a little Xanthan gum and I used Xylitol (because it's what I have) for my sweetener. Mine rose a little more than yours. Also, I didn't have any muffin tin liners, but I did use a non-stick muffin tin and sprayed it with oil. Still needed the liners, as a couple of them had to be "encouraged" out of the pan. These muffins are sooo good - DA BOMB DIGGETY!

I did not use monk fruit because it gives me a bad headache. The only sweetener I used was 3 heaping tablespoons of Lemon Curd and I added the juice of half a medium lemon. I made these in a square muffin pan(12 squares) I got from Amazon and baked at 365* for about 18 minutes. Very nice lemon blueberry breakfast muffins. 💙🍋💙🍋💙

I made these today! Matter of fact, they’re still hot! I used more than a cup of blueberries and I’ll have to wait till they cool off to see if the muffins are too wet. Had some left over yogurt so used the last of the blueberries and had a little snack while they baked. 😊
Hello just wondering if i can use pure honey for sweetener. I do not like artificial or substitute sweetner. 1 table spoon of honey is 17 carbs. 12 muffins would be only 1.4 grams of carbs. Omitting the substitute sweetener. With the honey should be around the same amount of carbs in this recipe. Nice Suggestions are appreciated. Thanks
400F is too high temperature for baking muffins. My muffin tops burnt. Next time I make these muffins, I will bake them at a lower temperature for longer time.

Not impressed. Not fluffy, airy, or anything close. Fairly dense, crumbly, and uninspiring. I appreciate the effort but this recipe needs work. I'm going to try coconut flour vs almond flour since the former is a bit finer.
lord please do not try coconut flour and also they are not interchangable in recipe. I tried with coconut flour and its dense as hell =( also they burn! =(
8 oz Greek yogurt 🤦🏽♀️ You really need to read your comments if you’re going to put these videos up. For anyone that’s wondering I had to go and search on her website she uses 8 ounces of Greek yoghurt in her muffin recipe. So annoying because I bought all the ingredients. Started to follow the recipe and then realised she didn’t give the quantity for the Greek yoghurt so I had to go searching for it. Makes me wonder does she actually watch her videos back.I don’t mean to be picky but it seems like quite an important ingredient to totally miss out the quantity!
