    your smoker is like CNC machine, I mean, a lot of settings , and I like that, must be fine tuning :)

    Very nice!! How much did you spend on your smoker and do you recommend those smokers?If you don't mind me asking? I'm trying to get a shirley fab smoker but the time frame is like 2years to get one

      Cedric M&R is way faster than 2 years. I do recommend the cookers but id recommend an additional workspace table instead of grill and butane burner. I dont really use those parts of my pit. It was about $8k. But that was 2 years. May be higher. The base model price is on their website though

    when you use the warmer box as a cooker you should close the damper on one of the grill stacks to push more smoke into the warmer box.

    Great video .. just got my first stick burner .(HBT Gameday) want to get into street food vending ..any advice/tips for a newbie and subscriber?

      Patience! in cooking and vending. it doesn't happen over night, but be patient and more importantly be consistent. if you aren't going to vend everyday, make sure its easy for ppl to remember when and where you will be. for instance I vend every first sunday at 11. period. that's easy to remember. for cooking, I got a video on fire management, but for a few pointers just keep it simple to start out. use just 1 type of wood, find a temp that you can maintain and try to get consistent cooks on any protein you put in the cook chamber, once you get that down and know your smoker, start experimenting with flavor profiles, mixing woods, etc. good luck!

      Ola any good welder can make you one or you can do it im getting ideas from him on my build. Harbor freight wire feed get the highest output wirefeed put a bottle of gas on there that will make it burn hotter and clean get a chop saw. So ya I liked video also. Good luck. Glory to God

    Did you upgrade to a 1/2 inch firebox or is that standard?

      I did upgrade and definitely glad I did. The 1/2 in box helps to retain heat and it offers added protection for the Warmer Box right above it. There is a gap between those two boxes but that extra thickness helps direct heat towards the cook chamber (which is where I want it) and not up and out of the firebox.

    You need to put a flame barrier around your hot water tank propane heater, why? The flames got pretty close to the rubber/plastic water pipe

      Preciate the tip. I'll look up some vids. I have had the mod done for over a year and in the dozen or so times I have heated up the water, I haven't had issues with the water piping BUT the rubber on the handles connected to the piping sit close to the flame and started to heat up pretty good. I caught it in time, but I got lucky. I will check out putting flame barrier on the mistress

    Get you a grey tank from an RV parts store and have it mounted under your sink. That would take care of your water drain issues.

      I designed it from a base model that I found from M&R Trailers. A local pit builder from Florida right outside of Jacksonville.

      I got mine built in Jacksonville, not sure he still makes up. But if you Google custom built bbq trailers you will get a list of anyone in your area. Texas, GA, and FL all have a lot of pit builders. Let me know where you stay n i might know of some in your state.

      imaginat stair step it. whatever you think you need, just go the next size up. this way you be covered down for the foods you plan and the bigger cooks you didnt see coming lol then when you starting thinkin bigger again... boom! you got a trailer pit hahaha ijs

      TREmendous Que I built me a 30" x 7' cooker and some times put 1 or 2 racks of ribs lol. Im building a vertical smoker just for smoking turkeys. This is a nice trailer.

    Are the doors slamming under heavy winds?

      Nah, it'd take hurricane force winds! The firebox door is 1/2 thick steel and the rest of the cooker is 1/4 inch thick. Only "unintended movement" i have noticed is the cooker doors if i dont have the cooker level. They may swing open or closed moreso than i want if its not level

      TREmendous Que thats what i meant, on cooker doors. Im trying to do mine like that but i dont want to be burning my elbows once i get the doors opened and start swinging side to side.

      Jerome W preciate man, the gas assist is adjustable. i had it at just about half way for the purposes of the vid and to show how it worked
