    I have been watching a lot of smoker videos for the purpose of building one myself. None have been as informative in describing how heat distribution works. My mind was racing with homemade ideas to replicate what you explained. Thank you for putting this together.

    I bought a chargrill offset smoker last year. This WHOLE time I've been putting my coal on the bottom bars off the cooking chamber, and my meats above it on the grates. I don't even use the smoker box at all. No water pan either. Can you believe I've made steaks, chicken, lamb etc with no problem besides constantly having to tend to the coal/wood fire, constantly moving the meat to move the grates, to reach the coal underneath lol. Smh and the food STILL came out amazing every time. Glad I learned all this today. Now I wanna experiment and use it the right way.
    Edit: And I use lighter fluid on the brickets lol
    Edit 2: No wonder I could never get the fire over 290 degrees lol. When I did it didn't last long.

    Bro. This was the perfect explanation for me as im completely new to all this. The diagrams with your explanation was all I needed to get started to understand what's happening to the meat when not under direct heat like a normal BBQ. 👍🏾👍🏾👍🏾

    Great video! Helped me figure out what to do with the beast I just inherited from my neighbor.
    All the other offset smoker videos were 15-30 mins so thanks for you condensed information, that being said, pace yourself no need to rush. Great visuals. Extremely useful information.

    I got a smoke hallow over the summer but wasnt confident enough to try out the smoker yet.. This is really helpful information and something I will think about next summer when I smoke for the first time!

      Most guys keep the stack vent wide open during the whole cook time. I understand the oxygen principle but wouldn't that cause the lose of excess heat? What are your thoughts?

      @@simflier8298 I have experimented and I haven't noticed a difference with heat loss. There could be more charcoal or wood consumption because the top vent is wide open.

    thank you for Showing.. this is good information.. I Built a smoker and I made it to be 2 in one.. offset smoker and revers flow... Of course you cant use both in the same run, ether or use... when this thing fires up at first with wood it goes into the food chamber almost like a rocket... I only used it once.. I need to seal the doors ( it does have gaps).. But I cooked one set of ribs and some chicken drums and they came out great.. All this info is good for making a smoker.. I should do a quick video on it..

    Thanks dude. Very useful presentation. Got question. The brisket we smoke tastes tart. What is the problem for that?

      It could depend on the type of ingredients you are putting on the meat before your cook. The tart taste could also be from the wood and charcoal you are using. Make sure you are only using salt and pepper for the BBQ rub and also only using chemical free wood and charcoal. Lastly, the tart taste could also be from how clean of a smoke you are doing. Make sure the fire is a clean (no white smoke) burn.

    Is there any way you show or send blue prints on how to build a pit , I'm writing from Venezuela and I very much would like to build one....thank you

      I'd recommend reading Franklin BBQ's book. He has a lot of useful information on how to make your own BBQ. I hope that helps! Cheers!
