  • How to Make Seafood Doria シーフードドリアの作り方 字幕表示可 材料(日本語)↓ (serves 2)
    20g Butter (0.7 oz)
    2 tbsp Cake Flour or substitute: all purpose flour
    300ml Milk (1.27 cups)
    ½ tsp Salt
    White Pepper
    1 Bay Leaf
    80g Onion, roughly chopped (2.8 oz)
    50g Mushrooms, shiitake and shimeji (1.8 oz)
    100g Seafood Mix, frozen (3.5 oz)
    1 tbsp White Wine
    180ml Rice (6.1 fl oz)
    60g Onion, chopped (2.1 oz)
    30g Carrot, chopped (1.1 oz)
    ⅓ Chicken Bouillon Cube
    30g Pizza Cheese (1.1 oz)
    ½ tbsp Butter
    Parsley Leaves
    Salt
    White Pepper

    autumnlily Brenda Ariesty Kusumasari The white wine or sake will remove the fishy smell of the seafood mix and bring out the flavor. If you can't use alcohol at all, rinse the seafood with salt water and remove the excess water thoroughly. This will help to reduce the smell :)

      For removing the fishy smell purpose, can I substitute (white) wine or other alcoholic beverages for the sake? Will it work?

      EC912 The wine will give it a citrus essence abit. But if you use a high quality wine that doesn't have much citrus sense, then it might work.

      EC912 The white wine was used in the video but you can also use sake instead :)

      Standard Spanish Paella:
      1. add oil to a pan and partially cook some meat in it
      2. remove meat (not oil) and set aside
      3.Make sofrito by adding onions, garlic, parsley
      4.add in tomatoes
      5. once things caramelize, add in the rice, fold it in, and stir fry briefly.
      6. add water and simmer (don't stir)
      7. add saffron ($$$$) or saffron substitute.
      8. add meat ingredients based on how long they cook (land meat first then whatever seafood...)
      9. Once rice fills pan and looks cooked, turn the heat up and toast the bottom...
      Here are some possible meats: chicken, rabbit, snails, sausage, and random seafood (usually mollusks and crustaceans).

    Butter + flour + milk, in France, it's a "Béchamel" :)
    If you add cheese inside + 1 egg yolk, it's a "Sauce Mornay". Very good !

      Yes, this style of western influenced cooking is called yōshoku (洋食) in Japan. :)

    I dont know but watching cooking with dog makes me feel peaceful. Francis's voice and the ways the chef cooks is so gentle and polite, especially when she hold stuff with 2 hands and when she put ingredients to the bowl. Another youtubers just throw everything together and always in rush lol

    Ate this almost everyday while I was visiting in Japan. Funny you can't find any type of doria dishes in japanese eateries outside of Japan. Now I know how to make it, thanks for the video

    it's almost french cuisine! Awesome! like to see a japaneese twist to something i'm used to eat! never tought about having «un gratin de fruits de mer à la sauce béchamel» on rice i'll try it for sure!

    Definitely making this! I can actually find these ingredients in stores around me~ I wish I lived in an area with more variety stores, but sadly being stuck in a ghetto makes it hard to come across these things. Thank you for the recipe! :)

    This looks so yummy and warm! We've been getting a lot of snow here in Maryland so I've been making a lot of one dish meals. I'll have to make this in my ramekin but am considering buying gratin dishes since they're adorable. Thank you Francis and Chef for making these recipes easy and fun :)

    A little grated garlic would really enhance the savory flavor of this sauce, I think. Garlic and mushrooms, garlic and seafood, garlic and cream sauce, garlic and cheese, these are all flavor synergies. Okay.. I admit it. I'm garlic obsessed.

    That sauce would be bomb over pasta! And for those worried about frozen seafood, most seafood is flash frozen as soon as it is caught. Like, on the actual boats. Or you can go to Asian grocery stores where they have live seafood that you pick out yourself.

    This is a great japanese cooking program! If it does not give any trade secrets away...who is the English speaker for the program? Also..many of your delicious recipies call for cake flour..If one cannot procure cake flour Chef, what is a suitible substitute? LOVE THE PROGRAM!!!!! Makes me want to start cooking!

    Hi, Francis. I really enjoy your show. I want to learn all the ingredients that you are using in your recipes. Unfortunately, here in Guam, we don't have much of it. :-/ I learned that you used Sake. Is that a liquor?

      Nicholas Nuwag yes, Sake is used as a cooking wine and it is alcoholic.

    Ughhh this looks sooo good, I wish I could get good-quality fresh seafood where I live, unfortunately I've heard too many stories about people getting sick to trust it for the most part. There's always frozen, but it's just never quite the same

    Thank you so much for this wonderful recipe! My husband and I enjoyed it a lot! I didn't have the mushrooms you've mentioned, though, I wonder if it's okay to use button mushrooms instead? And is it okay to use actual chicken stock instead of the cube and water?
