  • We are slightly changing our previous Takoyaki recipe and add favorite shrimp. The savory juice of the octopus and shrimp comes out of the freshly made takoyaki. So delicious!
    How to Make Takoyaki and Ebiyaki

    (serves 2: approx. 37 pieces)
    1 Beaten Egg
    340ml Cold Dashi Stock or ½ tsp dashi stock powder, dissolved (1.44 fl oz)
    1 tsp Soy Sauce
    ⅙ tsp Salt
    100g Cake Flour or all purpose flour (3.5 oz)
    80g Boiled Octopus, cut into 1cm/0.4” pieces (2.8 oz)
    8 Shrimp, medium size

    2 tsp Bonito Powder
    12g Beni Shoga, pickled ginger (0.4 oz)
    60g Cabbage Leaf, chopped (2.1 oz)
    20g Spring Onion Leaves (0.7 oz)
    Okonomiyaki Sauce
    Aonori Seaweed
    Bonito Flakes
    Mayonnaise

    My friend emmymadeinjapan has demonstrated how to make takoyaki (ruclips.net/video/TyadJhV8vHU/видео.html) using a cake pop maker and she used our takoyaki batter recipe! There is a much heated debate whether cabbage leaves can be used in takoyaki. If your guests are Japanese, make sure to get permission so that nobody gets upset... You can also use mochi, cheese, kimchi, sausage, or bacon for fillings and enjoy a variety of flavors!       If you don't have a Takayuki pan or a cake pop pan thing, you can also use a cast iron bunt donut pan.

    For those considering buying an electric actual takoyaki pan online, keep in mind they are usually imported from Japan and are meant to run on 100V. They will usually work at 110-120V too, but will be a bit hotter than intended, so you may be more likely to burn them if spending too long putting in fillings.

      There are converters to change 110-120V to 100V, but they can be up to US$80 or so (maybe as low as ~US$40 if you find a deal), which is often more than the pans themselves. Also, the higher heat is more likely to bubble or peel the non-stick coatings of those imported pans.

    I bought a takoyaki maker on Ebay almost two years ago, when I saw the seller was from Japan I knew it was good quality, also it was the cheapest from all the listed machines, and my takoyaki maker still works very well to this day. I use shrimp when I make takoyaki because octopus is very hard to come by where I live. I also use hot dog franks and cheese, they're ok I guess.

      fullmetal_alyssa Some may do and some are free shipping, When I bought mine it was free shipping and it took around 2 weeks (or less, I can't remember now) to arrive, you just have to go and look for the deals, that's what I do.

    I used your recipe to make takoyaki at home yesterday with a few of my friends!!! They turned out soooo well! I used baby octopuses (octopi, octopodes, etc.), shrimps, and ponzu-marinated pork chops. They were all so delicious and I can't thank you more for your recipe!       Check Amazon! I just looked and there are tons of them available. Shipping might be expensive because they're so heavy, but it's easy enough to get one there. :) I'm lucky to live in an area with lots of Japanese expats so I could just buy mine from a store, but you should be able to get one for yourself online!

      I also own a cast iron takoyaki pan (maybe even the same one as you). The trick really is in the heat source. You want a nice, even flame from center to edge, otherwise you'll be juggling different cooking times, which is a massive headache. Unfortunately, my range top is one of those with only a single row of burner outlets holes, so it's not uniform in the least. You'll probably do better with a good butane stove like what Chef uses as there are many more design options to choose from (plus, it's mobile!).

    I love this fresh new take on your original takoyaki video! It was the one that introduced me to your channel and made me immediately run out to my local Asian supermarket to purchase a small cast iron takoyaki pan. Since then, I've been steadily improving my technique. Using that pan is not as easy as the electric versions because most stove tops with gas ring burners don't evenly heat the pan, resulting in the surrounding wells hearing quickly, but less so in the center ones. I also want to say that your instructions this time to add more batter to the takoyaki after the first rotation is wise advice, indeed, as I've often found that the balls would not fully close without that extra little bit and end up looking like Pac-Man eating a tako (maybe a cute bento idea?). And one can never have too many chopped green onions =3

      Try using a cast iron griddle or pan underneath of the takoyaki pan to distribute the heat. Worked for me with another type of pancake cooker. Now, off to go find a takoyaki pan... Woosh!

      The thing about takoyaki pans, though, is that the bottoms are hemispherical, so not much surface area to transfer heat. Not saying it wouldn't work, but the efficiency is gonna suck. That's why the street vendor ones are usually direct flame under the plates.

    Best Taboyaki tutorial yet!! One of my best friends is half Japanese and a wonderful cook. For Christmas, this year, he's getting a Takoyaki kit (assembled in peices by me). He makes an amazing boiled octopus (SO tender) and this is perfect for him. I'm going to charge his inner Taboyaki... with this vid, and then gift him with the kit. THANX!!

      I think the cake pop makers go up to a higher temperature? I'm pretty sure the pan itself is pretty much the same tho.

      See I would think the other way around. A) because gimmicky home electric griddles usually don't get very hot, and B) because Emmy-chan told us to make sure to get the cake pop pan super hot before making them.

      The one I bought is cast-iron, so you set it on top of the stove-top and use it that way. Since cast-iron is exceptionally good at getting very very hot and holding the heat, I'm sure you'd get a better result with a pan over direct heat than something that's electric.

I assumed any cheap gimmicky item like that would be aluminum, and the real thing would be iron. then I remembered japan has at least historically been a little low on iron supply, so i don't know how old takoyaki is but the original pans were probably.. copper?

      Takoyaki is pretty great because you don't actually have to put in the 'tako'. All sorts of combinations are fun. My sister hates seafood, so her favourites are cheese, kimchi and hotdogs.

    I do have a question though. Is the takoyaki suppose to be "mushy"/ "juicy" on the inside? I do keep turning them until they are golden brown and are easily turned in the pan, but when I bite into it, the center is kinda "mushy". Is this the way they are suppose to be?

    「タコ焼き器」を買ったんですけど難しくて未だに丸くなりません。
    でも先生のやり方なら丸くなりそうなので、また挑戦してみますね。
    そう言えばアメリカ人のチャックは「タコ酢飯丼」を「美味い、美味い」と言って食っていたのですが、
    「ところでこれは何だ?」と訊いてきたので「タコだ」と答えたら、その途端に食うのを止めました。
    ヘタレですね。アメリカにもヨーロッパにもタコを食う習慣が無いそうなのですが、
    こんな美味いものを食わないなんて欧米人って馬鹿?
    (ポルトガル人だけはタコを食うそうです。タコのある部分は生で食うと非常に美味いとか)
    バングラデッシュのパスポートで密入国してきて日本に13年住んでいるインド人の友人は、
    タコが大好きで、そいつの冷蔵庫はタコだらけです。
    インドもタコを食う習慣が無いんですって。
    ちなみに私は、カラオケ店で罰ゲーム用の爆弾と称する辛子入りのタコ焼きを食っているうちに
    すっかり気に入りました(友だちも)。辛子入りのタコ焼き・・慣れると結構美味いですよ。

      Chef used raw shrimp in the video but they cooked thoroughly. In Japan, octopuses are often sold in cooked form in regular stores. :) Linh Nguyen

    If anyone is in need of a takoyaki pan, try looking up specialty Eastern Asian grocers. I got mine for around 12USD as a grocery store that I frequent (I was so surprised when they got it in stock and nabbed it right away despite not knowing a recipe for takoyaki at the time.) It's not very big (about 1/2 the size of the one in the video) but it does the job just fine! I never heard of using a Babycake maker but that's a great idea since those can be found in most department stores! Thank you and good luck!
