Maybe because the extra knight also comes already developed, even if not on a good position.

It's a 800 Elo gap. Stockfish 1 of 2008 is different than the stockfish level one on lichess.
1 as in version from 2008, and not lvl 1 from lichess

Huh? I thought Stockfish 1 is the one that randomly blunders peaces? At least when you set Stockfish 1 on Lichess it's always an easy win
I think that is Stockfish Level 1. This is Stockfish version 1.0 from 2008 with full strength.
