Oh hey! I’ve been making this for my dad for over a year now for breakfast. Well, a version of it. No shrimp. Mom has a shellfish allergy. But still cool to see this type of meal being made by others. My way, though, uses the still slight undercooking of the eggs to made it adhere to the tortilla while i toast it. This means the eggs come out not over cooked since I accommodated the extra cook time they would have when I dealt with the tortilla part. It really is a good and quick “on the go” type of breakfast. I’ve made these plenty of times just before work or a busy day out and about since they don’t actually take much time to make. They are very filling too!
